Berry Soup

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 cups fresh cranberries
  • 1 cup fresh raspberry
  • 2 cups cold water
  • 1/2 cup brown sugar, packed
  • 1/2 cup strawberry, reserves
  • 1/2 cup pistachios, chopped
  • 1 cup fresh basil, loosely torn

Recipe

  • 1 put the first four ingredients in a pot, and bring to a gentle boil. let simmer for 20 minutes.
  • 2 add the mixture, with the strawberry preserve into a blender, and blend until well mixed.
  • 3 mix in the last two remaining ingredients, and serve either warm or chilled.
