Asparagus And Cashew Stir Fry

Ingredients

- 1 1/2 lbs asparagus
- 2 tablespoons olive oil
- 2 teaspoons sesame oil
- 1 tablespoon finely chopped fresh ginger
- 1/2 cup coarsely chopped roasted cashews
- 1 tablespoon soy sauce or 1 tablespoon nama shoyu
Recipe
- 1 cut off the tough ends of the asparagus, and then slice diagonally into 2-3 pieces.
- 2 heat the oil together in a large skillet or wok over medium high heat.
- 3 add the ginger and stir fry for 1 minute.
- 4 add the asparagus and stir fry until tender but still a tiny bit crisp, 4-5 minutes. stir in the cashews and soy sauce.
- 5 serve immediately.
