Asparagus And Cashew Stir Fry

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs asparagus
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 1 tablespoon finely chopped fresh ginger
  • 1/2 cup coarsely chopped roasted cashews
  • 1 tablespoon soy sauce or 1 tablespoon nama shoyu

Recipe

  • 1 cut off the tough ends of the asparagus, and then slice diagonally into 2-3 pieces.
  • 2 heat the oil together in a large skillet or wok over medium high heat.
  • 3 add the ginger and stir fry for 1 minute.
  • 4 add the asparagus and stir fry until tender but still a tiny bit crisp, 4-5 minutes. stir in the cashews and soy sauce.
  • 5 serve immediately.
