Banana Bread

Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs, beaten
- 4 overripe bananas, mashed
- 1/2 teaspoon vanilla
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 cup pecans, chopped
Recipe
- 1 preheat oven to 350°f.
- 2 cream together the butter and sugar.
- 3 add the eggs, mashed bananas, and vanilla, and stir until well combined.
- 4 in a separate bowl, blend the flours, baking soda, salt, and spices.
- 5 add the flour mixture to the banana mixture and stir until well combined.
- 6 stir in chopped pecans.
- 7 pour into a greased loaf pan, and bake for 45 minutes.
- 8 take the loaf pan out of the oven and cover the edges with aluminum foil to help prevent burning while the middle finishes cooking.
- 9 return the pan to the oven and bake for another 15 minutes.
