Apple Cream Cheese Stuffed Acorn Squash (microwave)

Ingredients

- 1 acorn squash
- 2 apples, cubed
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cream cheese (softened)
- 1/4 cup raisins (optional) or 1/4 cup chopped nuts (optional)
Recipe
- 1 cut acorn squash in half lengthwise and spoon out the seeds.
- 2 place halves, cut side down, in a microwave-safe dish with a couple tablespoons of water.
- 3 cook (covered) in microwave on high for 5 minutes or until just tender.
- 4 meanwhile, slice up your apples and mix with the sugar, cinnamon, cream cheese, and the optional raisins/nuts.
- 5 when squash is done, turn them over and fill the holes with your apple mixture.
- 6 put it back in the microwave (covered) for another 5 minutes.
- 7 let squash rest for a few minutes to cool off before devouring.
