Apricot And Pistachio Cous Cous

Ingredients

  • Servings: 4
  • 3/4 cup couscous
  • 1/2 cup water
  • 1/2 cup orange juice
  • 7 dried apricots, chopped
  • 1/4 cup pistachios
  • 1/4 cup feta (or more)
  • 4 basil leaves, chopped
  • 1 teaspoon butter
  • salt and pepper

Recipe

  • 1 combine water, orange juice, and butter in a medium sauce pan over medium high heat.
  • 2 bring just to a boil and stir in cous cous. cover and remove from heat.
  • 3 let stand 5 minutes, until liquid is absorbed. fluff with a fork.
  • 4 add chopped apricots. pistachios, feta, basil and salt and pepper.
