Apricot And Pistachio Cous Cous

Ingredients
- Servings: 4
- 3/4 cup couscous
- 1/2 cup water
- 1/2 cup orange juice
- 7 dried apricots, chopped
- 1/4 cup pistachios
- 1/4 cup feta (or more)
- 4 basil leaves, chopped
- 1 teaspoon butter
- salt and pepper
Recipe
- 1 combine water, orange juice, and butter in a medium sauce pan over medium high heat.
- 2 bring just to a boil and stir in cous cous. cover and remove from heat.
- 3 let stand 5 minutes, until liquid is absorbed. fluff with a fork.
- 4 add chopped apricots. pistachios, feta, basil and salt and pepper.
