Avocado And Sweet Potato "hash"

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2 sweet potatoes, cooked and diced
  • 1 avocado, peeled pitted and diced
  • 4 pieces bacon, cooked and chopped
  • 1 tablespoon whole grain mustard
  • 1/4 cup red onion, diced
  • 2 tablespoons pecans, chopped
  • kosher salt (it called for 1 tablespoon, i can't use that much)
  • 1 teaspoon black pepper

Recipe

  • 1 cool sweet potatoes in an ice bath.
  • 2 having cooked bacon in medium skillet, remove and set aside. add sweet potatoes and caramelize on each side. remove from heat.
  • 3 add red onion, mustard, salt and pepper and toss.
  • 4 chop bacon to 1/4 inch strips and mix into hash.
  • 5 fold in parsley, pecans and avocado.
  • 6 season to taste.
  • 7 serve warm to room temperature.
