Bean Dip

Ingredients
- 1 (15 1/2 ounce) can black-eyed peas
- 1 (15 1/2 ounce) can black beans
- 1 (15 1/2 ounce) can shoepeg corn
- 1 (4 ounce) jar pimentos, chopped
- 1/4 cup red onion, chopped
- 1 cup sugar
- 1 cup cider vinegar
- 1/2 cup olive oil
Recipe
- 1 rinse beans and corn then combine all ingredients. combine 1 cup cider vinegar and 1 cup sugar in small saucepan. bring to boil and cook until sugar is dissolved then pour over ingredients. add 1/2 cup olive oil. stir and marinade over night. enjoy with your favorite chips.
