Baked Oatmeal With Fruit And Nuts

Ingredients
- Servings: 8
- 1 medium apple, chopped
- 1/2 cup dates, chopped
- 3 cups oats
- 3 cups soymilk (or rice milk, skim milk, etc)
- 2 teaspoons vanilla
- 1/2 cup nuts, chopped
Recipe
- 1 spread chopped apples and dates in the bottom of baking dish sprayed with vegetable spray.
- 2 add oatmeal and spread evenly.
- 3 mix vanilla into milk and pour over the oatmeal.
- 4 spread nuts evenly over the top of the oatmeal.
- 5 bake, covered, in a 350 degree oven for 50 to 60 minutes or until set.
- 6 serve warm with added milk.
- 7 note: this can be individually portioned and frozen for convenient use later.
