Baked Oatmeal With Fruit And Nuts

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 medium apple, chopped
  • 1/2 cup dates, chopped
  • 3 cups oats
  • 3 cups soymilk (or rice milk, skim milk, etc)
  • 2 teaspoons vanilla
  • 1/2 cup nuts, chopped

Recipe

  • 1 spread chopped apples and dates in the bottom of baking dish sprayed with vegetable spray.
  • 2 add oatmeal and spread evenly.
  • 3 mix vanilla into milk and pour over the oatmeal.
  • 4 spread nuts evenly over the top of the oatmeal.
  • 5 bake, covered, in a 350 degree oven for 50 to 60 minutes or until set.
  • 6 serve warm with added milk.
  • 7 note: this can be individually portioned and frozen for convenient use later.
