Baked Onions

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 medium yellow onions
  • 2 quarts chicken stock
  • 3 tablespoons butter, melted
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/8 teaspoon dried thyme

Recipe

  • 1 peel onions but leave them whole.
  • 2 place the peeled onions in a large pot and add the chicken stock.
  • 3 bring to a boil, cover, and simmer gently for 30 minutes.
  • 4 carefully drain the onions, reserving the stock for another use.
  • 5 place the onions in a shallow oven proof-baking dish so that they fit comfortably.
  • 6 combine the melted butter, paprika, black pepper, and salt; pour the mixture over the onions.
  • 7 turn the onions to coat all of them with the seasoned butter mixture.
  • 8 bake in a preheated 400 oven fahrenheit for 15 minutes.
  • 9 mix together the melted butter, breadcrumbs, salt and dried thyme for the crumb topping; sprinkle it over the onions.
  • 10 bake for 15 minutes more.
