Baked Onions

Ingredients

- 6 medium yellow onions
- 2 quarts chicken stock
- 3 tablespoons butter, melted
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- 1/2 cup breadcrumbs
- 1/2 teaspoon salt
- 1/8 teaspoon dried thyme
Recipe
- 1 peel onions but leave them whole.
- 2 place the peeled onions in a large pot and add the chicken stock.
- 3 bring to a boil, cover, and simmer gently for 30 minutes.
- 4 carefully drain the onions, reserving the stock for another use.
- 5 place the onions in a shallow oven proof-baking dish so that they fit comfortably.
- 6 combine the melted butter, paprika, black pepper, and salt; pour the mixture over the onions.
- 7 turn the onions to coat all of them with the seasoned butter mixture.
- 8 bake in a preheated 400 oven fahrenheit for 15 minutes.
- 9 mix together the melted butter, breadcrumbs, salt and dried thyme for the crumb topping; sprinkle it over the onions.
- 10 bake for 15 minutes more.
