Aloo Phujia

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 onion, chopped
  • 1/4 cup vegetable oil
  • 1 lb potato, peeled and cubed
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cumin
  • 2 tomatoes, chopped

Recipe

  • 1 lightly brown onion in oil in medium skillet.
  • 2 stir in salt cayenne turmeric and cumin.
  • 3 add potatoes and cook 20 minutes stirring occasionally.
  • 4 add tomatoes; cover and cook until potatoes are soft, about 20 minutes.
