Ingredients

- 1 onion, chopped
- 1/4 cup vegetable oil
- 1 lb potato, peeled and cubed
- 1 teaspoon salt
- 1/2 teaspoon cayenne
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cumin
- 2 tomatoes, chopped
Recipe
- 1 lightly brown onion in oil in medium skillet.
- 2 stir in salt cayenne turmeric and cumin.
- 3 add potatoes and cook 20 minutes stirring occasionally.
- 4 add tomatoes; cover and cook until potatoes are soft, about 20 minutes.
