- 1/2 cup water
- 1 lb eggplant, sliced, 1/2 inch thick (12 slices)
- 1/3 cup italian breadcrumbs
- vegetable oil cooking spray
Recipe
- 1 grease skillet with cooking spray.
- 2 slice eggplant.
- 3 moisten with water.
- 4 cover with breadcrumbs.
- 5 cook in skillet until golden on both sides.
- 6 spritz with lemon juice(optional).
