Batter-fried Scallions

Ingredients
- Servings: 4
- 1 cup wine
- 1 cup flour
- salt
- fresh ground black pepper
- crushed red pepper flakes
- 40 scallions (4 bunches)
- vegetable oil
Recipe
- 1 whisk wine into flour in a bowl until smooth.
- 2 season with salt, black & red pepper.
- 3 halve scallions crosswise.
- 4 dip into batter, and fry in hot vegetable oil in a skillet over medium heat until crisp, 2รข€“3 minutes.
- 5 drain on paper towels, and salt generously.
