Avocado And Sweet Potato "hash"

Ingredients
- 2 sweet potatoes, cooked and diced
- 1 avocado, peeled pitted and diced
- 4 pieces bacon, cooked and chopped
- 1 tablespoon whole grain mustard
- 1/4 cup red onion, diced
- 2 tablespoons pecans, chopped
- kosher salt (it called for 1 tablespoon, i can't use that much)
- 1 teaspoon black pepper
Recipe
- 1 cool sweet potatoes in an ice bath.
- 2 having cooked bacon in medium skillet, remove and set aside. add sweet potatoes and caramelize on each side. remove from heat.
- 3 add red onion, mustard, salt and pepper and toss.
- 4 chop bacon to 1/4 inch strips and mix into hash.
- 5 fold in parsley, pecans and avocado.
- 6 season to taste.
- 7 serve warm to room temperature.
