Basic Risotto

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 teaspoon garlic, minced (to taste)
  • 2 cups arborio rice
  • 1/4 cup dry wine
  • 2 1/2 cups chicken broth or 2 1/2 cups vegetable broth
  • 1/3 cup parmesan cheese or 1/3 cup asiago cheese, grated

Recipe

  • 1 bring broth to boil in saucepan.
  • 2 melt butter in a different saucepan.
  • 3 add onion and garlic to butter, saute until tender.
  • 4 add rice. saute 2-3 minutes.
  • 5 add wine. stir until absorbed.
  • 6 add hot broth 1/4 cup at a time. stir occasionally until broth is absorbed.
  • 7 continue adding broth in small amounts until all broth is absorbed. this should take 20-25 minutes.
  • 8 try some of the rice. it should be tender but firm.
  • 9 when the rice is done, add cheese. stir until melted and combined.
  • 10 serve immediately.
