Bleu Cheese Soup

Ingredients
- Servings: 4
- 3 baking potatoes, peeled and quartered
- 1 onion, chopped
- 1 stalk celery, chopped
- 2 carrots, chopped
- 6 cups chicken broth or 6 cups water
- 1/4 cup dry sherry, to taste
- 4 ounces crumbled blue cheese or 4 ounces gorgonzola or 4 ounces stilton cheese
- salt and pepper
- chives, for topping (optional)
Recipe
- 1 put first 5 ingredients in 1 pot, bring to boil, then simmer 45 minutes-1hour pour into blender in batches, or use a hand blender to liquefy.
- 2 add cheese, sherry and simmer till cheese is melted.
- 3 serve w/chives on top.
