Bleu Cheese Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 3 baking potatoes, peeled and quartered
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 carrots, chopped
  • 6 cups chicken broth or 6 cups water
  • 1/4 cup dry sherry, to taste
  • 4 ounces crumbled blue cheese or 4 ounces gorgonzola or 4 ounces stilton cheese
  • salt and pepper
  • chives, for topping (optional)

Recipe

  • 1 put first 5 ingredients in 1 pot, bring to boil, then simmer 45 minutes-1hour pour into blender in batches, or use a hand blender to liquefy.
  • 2 add cheese, sherry and simmer till cheese is melted.
  • 3 serve w/chives on top.
