Apples And Onions: A Side Dish For Lamb

Ingredients
- 1/4 lb lean bacon
- 1 lb apple, sliced
- 1 lb onion, peeled and sliced
- salt and pepper
- 1 tablespoon brown sugar (use only if apples are tart and the onions too strong)
Recipe
- 1 cut bacon in inch squares and fry out.
- 2 remove bacon.
- 3 reserve grease.
- 4 clean the fry pan.
- 5 add 1 tablespoon of bacon fat to hot fry pan and add onions.
- 6 brown the onions until golden and translucent.
- 7 add more fat if needed.
- 8 add apples and cook until tender.
- 9 taste, if mixture is a bit sharp, add brown sugar.
- 10 pour apples/onions into a hot baking dish.
- 11 top w/ crumbled bacon.
- 12 cover& keep warm in oven until serving time.
