Banana Stuffed Acorn Squash

Ingredients

- 1 ripe acorn squash
- 1 ripe banana
- cinnamon
- sugar
- brown sugar
- nutmeg
- 2 drops vanilla extract
- butter substitute, if desired
Recipe
- 1 preheat oven to 350f degrees.
- 2 cut the acorn squash in half.
- 3 perpendicular to the lines.
- 4 scoop out the sides and hack off the stem so that each half stands like a bowl.
- 5 combine spices with mashed banana and add vanilla.
- 6 add butter substitute if desired.
- 7 fill each bowl with mixture and smear on sides.
- 8 sprinkle more spices over the top.
- 9 place in baking dish with a little water in the bottom.
- 10 bake 45 minutes or until tender.
