Banana Stuffed Acorn Squash

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 1 ripe acorn squash
  • 1 ripe banana
  • cinnamon
  • sugar
  • brown sugar
  • nutmeg
  • 2 drops vanilla extract
  • butter substitute, if desired

Recipe

  • 1 preheat oven to 350f degrees.
  • 2 cut the acorn squash in half.
  • 3 perpendicular to the lines.
  • 4 scoop out the sides and hack off the stem so that each half stands like a bowl.
  • 5 combine spices with mashed banana and add vanilla.
  • 6 add butter substitute if desired.
  • 7 fill each bowl with mixture and smear on sides.
  • 8 sprinkle more spices over the top.
  • 9 place in baking dish with a little water in the bottom.
  • 10 bake 45 minutes or until tender.
