Banana Nut Butter

Ingredients
- 3 cups bananas, ripe mashed
- 1 tablespoon lemon juice
- 1 3/4 ounces fruit pectin
- 1/2 teaspoon butter
- 4 cups sugar
- 1/2 cup light brown sugar
- 2 cups walnuts, chopped and toasted
- 1 1/4 teaspoons cinnamon (or ginger, they will be very different)
- 1/2 teaspoon nutmeg
Recipe
- 1 use standard canning procedures.
- 2 place bananas and lemon juice into a saucepan. mix well.
- 3 stir in pectin. add butter to reduce foaming.
- 4 bring to a full rolling boil on high heat, stirring constantly.
- 5 add sugars and stir till well blended.
- 6 add walnuts and spices, mix well.
- 7 return to rolling boil and boil 1 minute stirring constantly.
- 8 remove from heat and skim off any foam.
- 9 ladle into prepared jars within 1/8 in of top.
- 10 seal with good canning procedures.
