Blackberry Jelly

Ingredients
- 5 quarts blackberries
- 1 1/4 cups water
- sugar
Recipe
- 1 combine berries and water.
- 2 bring slowly to a boil.
- 3 cook until berries are soft.
- 4 strain overnight in a jelly strainer, lined with cheesecloth that has been wrung out in hot water.
- 5 measure juice.
- 6 boil juice 8-12 minutes.
- 7 skim.
- 8 remove from heat.
- 9 add sugar: 3/4 cup sugar per 1 cup of juice.
- 10 stir until dissolved.
- 11 return to heat and boil until 220f.
- 12 on a thermometer.
- 13 this should take 3-10 minutes.
- 14 pour into sterilized jars and seal.
