Banana Nut Bread

Total Time: 1 hr 5 mins Cook Time: 1 hr 5 mins

Ingredients

  • 2 1/2 cups all-purpose flour, not self rising
  • 1/2 cup granulated sugar
  • 1/2 cup of packed brown sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1/3 cup milk (soy and rice milk work as well)
  • 1 egg (egg replacer does not work)
  • 1 1/4 cups mashed bananas, 4 works well though (2 or 3 medium)
  • 1 cup of chopped nuts (optional)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8 1/2x 4 1/2, 2 1/2 .
  • 3 mix all ingredients. (order does not matter).
  • 4 beat for 30 seconds with beater or hand mix until even,.
  • 5 pour mixture into pan(s).
  • 6 bake until toothpick inserted in center comes out clean, should take about 65-70 minutes.
  • 7 loosen sides of loaf of loaf from pan, remove if you wish.
  • 8 cool completely before slicing,.
  • 9 to store, wrap and refrigerate no longer than 1 week.
