Banana Nut Bread

Ingredients
- 2 1/2 cups all-purpose flour, not self rising
- 1/2 cup granulated sugar
- 1/2 cup of packed brown sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1/3 cup milk (soy and rice milk work as well)
- 1 egg (egg replacer does not work)
- 1 1/4 cups mashed bananas, 4 works well though (2 or 3 medium)
- 1 cup of chopped nuts (optional)
Recipe
- 1 preheat oven to 350 degrees f.
- 2 grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8 1/2x 4 1/2, 2 1/2 .
- 3 mix all ingredients. (order does not matter).
- 4 beat for 30 seconds with beater or hand mix until even,.
- 5 pour mixture into pan(s).
- 6 bake until toothpick inserted in center comes out clean, should take about 65-70 minutes.
- 7 loosen sides of loaf of loaf from pan, remove if you wish.
- 8 cool completely before slicing,.
- 9 to store, wrap and refrigerate no longer than 1 week.
