Bell Pepper Stir-fry

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/4 cup soy sauce
  • 2 tablespoons pineapple juice
  • 2 teaspoons cornstarch
  • 2 teaspoons vegetable oil
  • 3 medium bell peppers, seeded and cut into strips (any color combination will work)

Recipe

  • 1 combine first 3 ingredients in a small bowl; set aside.
  • 2 coat a wok or skillet with non-stick cooking spray; add oil.
  • 3 place over medium-high heat until hot.
  • 4 add peppers and stir-fry 4 minutes.
  • 5 add reserved sauce mixture.
  • 6 cook, stirring constantly until thickened.
  • 7 serve over hot, cooked rice.
