Bell Pepper Stir-fry

Ingredients
- Servings: 4
- 1/4 cup soy sauce
- 2 tablespoons pineapple juice
- 2 teaspoons cornstarch
- 2 teaspoons vegetable oil
- 3 medium bell peppers, seeded and cut into strips (any color combination will work)
Recipe
- 1 combine first 3 ingredients in a small bowl; set aside.
- 2 coat a wok or skillet with non-stick cooking spray; add oil.
- 3 place over medium-high heat until hot.
- 4 add peppers and stir-fry 4 minutes.
- 5 add reserved sauce mixture.
- 6 cook, stirring constantly until thickened.
- 7 serve over hot, cooked rice.
