Basic Pastry (patisserie) Low Fat

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons sugar
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/4 cup low fat cottage cheese (1%)
  • 1 tablespoon canola oil
  • 2 tablespoons water

Recipe

  • 1 place flour, sugar, baking powder, and salt in a food processor fitted with plastic blade.
  • 2 pulse briefly to combine, then with motor running, add cottage cheese and oil.
  • 3 quickly add water and pulse quickly just to combine. the dough will be crumbly but moist.
  • 4 remove dough from the processor bowl, use your hand to gently pat the dough together to form a disk shape.
  • 5 wrap in plastic wrap, refrigerate for 30 minutes, or until well chilled.

Blood Orange Sorbetto

Total Time: 42 mins Preparation Time: 5 mins Cook Time: 37 mins

Ingredients

  • Servings: 15
  • 1 cup water
  • 1/2 cup sugar
  • 2 cups blood orange juice

Recipe

  • 1 in a saucepan over medium-high heat, bring water and sugar to a simmer.
  • 2 simmer for two minutes to dissolve the sugar.
  • 3 remove from the heat and cool.
  • 4 stir in juice and taste for sweetness.
  • 5 make the sorbetto according to the manufacturer's instructions for your ice cream maker, or pour the mixture into a shallow dish and place in the freezer for one hour. break ice particles with a fork every hour until a smooth, frozen consistency is achieved.

Avocado Toast

Total Time: 6 mins Preparation Time: 3 mins Cook Time: 3 mins

Ingredients

  • 1 avocado
  • 1/2 tomato
  • 2 slices bread
  • salt and pepper
  • 1 teaspoon mayonnaise
  • 3 sprigs fresh parsley

Recipe

  • 1 peel and mash the avocado. add salt and pepper to taste; be careful about adding too much salt!
  • 2 toast the bread.
  • 3 slice the tomato into half inch rounds.
  • 4 spread mayo, and then avocado on the toast. top each slice with a tomato round.
  • 5 place a sprig of parsley on top of the tomato, then chop up the third sprig and sprinkle it over the avocado.
  • 6 enjoy.

Recipe

  • 1 toast bread.
  • 2 spread avocado generously on toast.
  • 3 sprinkle black pepper on top.

Basic Mexican Rice

Ingredients

  • Servings: 4
  • 2 tablespoons cooking oil
  • 1 cup long grain rice (not instant)
  • 2 cloves pressed garlic
  • 1 medium finely chopped onion
  • 3 medium finely chopped tomatoes
  • 1 green chili pepper, finely chopped
  • 2 cups chicken broth
  • 1 teaspoon salt

Recipe

  • 1 in a large skillet, heat the oil and saute the rice over medium high heat until golden brown.
  • 2 stir in the garlic and the onions and saute until onion is golden yellow.
  • 3 stir in the tomatoes, broth and season with salt.
  • 4 bring to a boil uncovered, reduce heat to low, cover and simmer for 15-20 minutes.
  • 5 do not take lid off to peak in!
  • 6 remove lid, toss with a fork to fluff and allow to sit for 5 minutes uncovered before serving.

Berries And Cream Oatmeal

Ingredients

  • 2/3 cup cooked oatmeal
  • 1/2 tablespoon blueberry jelly
  • 1 dash cinnamon
  • 1 tablespoon cool whip
  • 1 teaspoon sugar (optional) or 1 teaspoon sugar substitute, to taste (optional)

Recipe

  • 1 stir ingredients and enjoy!
  • 2 if you don't use cool whip, you can substitute with 2% milk, buttermilk, light cream, half and half, soymilk etc. it really is up to your own personal preference for creaminess/consistency/taste/richness/mouth feel/flavor.
  • 3 i use blueberry jelly because it is my favorite, but you can also use whatever jelly you like.
  • 4 and try other spices too, such as nutmeg, ginger, cloves -- the possibilities are endless!

Avocado Toast With Lemon

Ingredients

  • 1 avocado, quartered
  • 4 slices bread, toasted medium well
  • 1 lemon, quartered
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 mash the avocado and spread it evenly on the toast pieces.
  • 2 squirt the lemon juice over the avocado. (optional: peel and place the lemon in pieces on top, after the squeeze. i started this when i was a kid and still love it this way. very lemony!).
  • 3 salt and pepper. eat immediately before it gets soggy. this dish is best prepared by the person eating it so they are available to eat it right away!

Applesauce

Ingredients

  • 6 tablespoons honey
  • 3 tablespoons cinnamon

Recipe

  • 1 peel and chop apples.
  • 2 put apples, honey and cinnamon into the crock pot.
  • 3 cook on low for 8 hours.

Bermudan Style Rice

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 6 slices bacon, chopped
  • 1 onion, minced
  • 1 green bell pepper, minced
  • 2 cups chopped tomatoes, and their juices
  • 1/4 cup tomato paste
  • 1 1/2 cups rice, medium grain
  • 1/2 teaspoon dried thyme
  • 2 cups water or 2 cups chicken stock

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 cook the bacon in a an ovenproof pan until crisp, remove from pan, let cool.
  • 3 in the pan drippings from the bacon, over medium heat, cook the onion for 3 minutes. add the bell pepper and sauté for 1 minute. add the tomatoes and their juices, the tomato paste, the rice, salt, and pepper to taste, and the thyme, and sauté for 1 minute. add the water and bring to a boil. cover the pan and place it into the oven for 30 minutes.
  • 4 remove the rice from the oven. using a fork, fluff the cooked rice and mix in the crisp crumbled bacon before serving.

Appledelicious Pie Filling

Ingredients

  • 6 lbs apples
  • 2 cups sugar
  • 1/4 cup flour
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons lemon juice

Recipe

  • 1 wash, peel, core and slice apples.
  • 2 treat to prevent darkening.
  • 3 combine sugar, flour and spices.
  • 4 rinse and drain apples; stir into sugar mixture.
  • 5 let stand until juices begin to flow, about 30 minutes.
  • 6 stir in lemon juice.
  • 7 cook over medium heat until mixture begins to thicken.
  • 8 ladle pie filling into can-or-freeze jars or plastic freezer boxes, leaving 1/2-inch headspace.
  • 9 cool at room temperature,not to exceed 2 hours.
  • 10 seal, label andn freeze.
  • 11 yield: about 6 pints.
  • 12 note: you can can this recipe if you put hot filling into hot sterilized jars and seal properly.
  • 13 you may cook in hot water bath for 15 to 25 minutes.
  • 14 i made immediately into an apple pie and cooked at 425* for 15 minutes, then lowered temperature to 350* for 30 more minutes.

  • 1 toast bread.

Amaretto

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 cups vodka
  • 2 tablespoons almond extract (not imitation)
  • 2 teaspoons vanilla extract

Recipe

  • 1 combine water and sugars in a very large saucepan over medium heat.
  • 2 heat until the mixture is boiling and all sugar is dissolved.
  • 3 reduce heat to low and continue to simmer for approximately 2 hours until mixture is thickened and syrupy and lightly coats a spoon.
  • 4 remove pan from heat and allow to cool for 10 minutes.
  • 5 add vodka and extracts and stir well.
  • 6 pour into a bottle and seal.

Baked Risotto

Ingredients

  • Servings: 4
  • 1 (10 ounce) can cream of mushroom soup
  • 3/4 cup water
  • 1/2 cup milk
  • 1/4 cup shredded mozzarella cheese
  • 3 tablespoons parmesan cheese
  • 2 cups baby spinach leaves (or 1 cup of frozen spinach)
  • 1 cup chopped red pepper
  • 1 cup chopped mushroom
  • 1 chicken breast, cut into 1-inch pieces
  • 1 teaspoon chopped fresh thyme (or 1/4 tsp dried thyme)
  • 3/4 cup uncooked arborio rice (italian style)

Recipe

  • 1 mix soup, water, milk, and cheese in a shallow 2l baking dish.
  • 2 stir in all remaining ingredients.
  • 3 cover and bake at 400' for 35 minutes.
  • 4 uncover, stir, and cook for another 15 minutes.
  • 5 let stand for 5 minutes before serving.

Blonde Sangria

Ingredients

  • Servings: 12
  • 750 ml wine
  • 375 ml vodka, top shelf like stoli's
  • 1 (64 ounce) can pineapple juice
  • 1 liter sprite
  • 1 (12 ounce) can cranberry juice
  • 1 cup strawberry, sliced
  • 1 orange, sliced
  • 1 lemon, sliced
  • 2 cups ice cubes

Recipe

  • 1 mix all liquid ingredients with the ice into a punch bowl, then add the fruit.
  • 2 stir, serve up, and enjoy, but be careful, it sneaks up on you, but it tastes sooo good! also good to add champagne instead of wine.

Basic Pasta With Semolina (eggless Pasta)

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 2 cups semolina flour
  • 2 cups all-purpose flour
  • 1 -1 1/4 cup tepid water

Recipe

  • 1 place both types of flour in a large mixing bowl and stir to mix well.
  • 2 make a well in the center of the flour mixture and add water a little at a time, stirring with your hands until a dough is formed.
  • 3 you may need more or less water, depending on the humidity in your kitchen.
  • 4 place the dough on a floured work surface and knead it like bread for 8 to 10 minutes until smooth and elastic.
  • 5 cover and let stand for 10 minutes at room temperature before using.

Basic Pasta Dough (no Egg)

  • 3 cups flour
  • 1 cup warm water
  • 2 tablespoons olive oil

Recipe

  • 1 put flour in large mixing bowl, making a well in the center.
  • 2 add wet ingredients to well and very slowly mix together with a fork, incorporating only a little flour at a time so it mixes smoothly and evenly. trust me, the more patient you are with this the better it will turn out.
  • 3 continue kneading by hand for about 10 minutes, let rest for a half hour covered with a towel. repeat a couple times until dough is smooth and silky, and just slightly sticky.
  • 4 shape by hand or with a machine.
  • 5 note: boiling fresh pasta takes significantly less time than dry pasta. depending on the shape, cook for 30 seconds to 2 minutes.

Bernard Clayton's Potato Bread (adaptation)

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 medium potatoes, peeled and cut in smallish chunks
  • 2 cups water
  • 5 1/2 cups bread flour or 5 1/2 cups all-purpose flour (approximately)
  • 4 1/2 teaspoons dry yeast
  • 1 tablespoon kosher salt
  • 2 tablespoons sugar
  • 1/4 cup butter

Recipe

  • 1 boil the peeled potatoes in the 2 cups of water in a saucepan until fork tender.
  • 2 place 3 cups of flour with yeast, salt, and sugar into a mixing bowl and blend.
  • 3 after potatoes are tender, reserve liquid, and rice (or mash) the potatoes.
  • 4 add riced potatoes back into pan with the 1 3/4 cups (add more water if you don't have the total amount reserved) reserved liquid, and add the butter, heating until butter is just melted.
  • 5 pour the butter/potato mixture into the mixing bowl with the flour mixture.
  • 6 mix with paddle until blended and then change to dough hook to incorporate more flour by 1/4 cupfulls (adding a total of another 2 cups equalling 8 additions or a bit more until the hook and dough rotate easily together).
  • 7 knead with the dough hook for 10 minutes.
  • 8 (dough will remain slightly sticky).
  • 9 place dough into a large greased bowl and cover with plastic wrap allowing to double in volume; about 1 hour.
  • 10 when fully risen, punch dough down and move to a floured surface.
  • 11 slice into 2 equal pieces.
  • 12 flatten one piece into a long oval, fold in half lengthwise, pinch that seam, fold under the outer ends, and place into a loaf pan.
  • 13 with other piece, cut into 3 equal parts, rolling each piece into a long cylindrical piece with your hands.
  • 14 braid these 3 pieces together, pinching and tucking in ends and place on a greased cookie sheet.
  • 15 cover both loaves with waxed paper (or parchment) and allow to rise for an additional 40 minutes.
  • 16 during the last 20 minutes of rising time, preheat oven to 400 degrees fahrenheit.
  • 17 when fully risen, place both loaves in preheated oven and bake for 15 minutes.
  • 18 after those 15 minutes, lower heat to 350 degrees fahrenheit and continue baking for an additional 25-30 minutes until slightly golden and hollow sounding when tapped.
  • 19 remove from oven and immediately and carefully place on racks to cool.

Avocado Salsa

Ingredients

  • 1 avocado, large, diced to about 1/2 inch
  • 1 1/2 tablespoons onions, finely diced
  • 1 teaspoon jalapeno pepper, minced
  • 1 1/2 teaspoons cilantro, fresh, chopped
  • 2 teaspoons lime juice, freshly squeezed
  • 2 tablespoons salsa, store bought

Recipe

  • 1 combine all the ingredients and fold to blend.
  • 2 be careful not to smash the avocados.

Blood Orange Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 4 cups whole wheat flour (or flour)
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups blood orange juice
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup honey

Recipe

  • 1 preheat the oven to 350 degrees fahrenheit.
  • 2 mix the flour, sugar, baking soda, and salt in a bowl and set aside.
  • 3 mix the orange juice, egg, oil, and honey in a separate bowl.
  • 4 mix the dry ingredients into the orange juice mixture.
  • 5 pour the batter into greased muffin trays and bake for about 20 minutes.

Avocado Salsa

  • your favorite brand nacho chip

Recipe

  • 1 mash the avocados, leaving small chunks.
  • 2 add remaining ingredients, and mix together.
  • 3 let sit in the refrigerator for 1 to 2 hours uncovered.

Blood Orange Mojito

Total Time: 2 mins Preparation Time: 2 mins

Ingredients

  • Servings: 1
  • 1 tablespoon icing sugar
  • 1 tablespoon fresh lemon juice or 1 tablespoon lime juice
  • 12 mint leaves
  • 6 tablespoons rum
  • 1/4 cup blood orange juice
  • 1/8-1/4 fluid ounce ginger ale or 1/8-1/4 fluid ounce club soda

Recipe

  • 1 combine the sugar, lemon juice and mint leaves in a tall glass; mash with the back of a spoon.
  • 2 mix in the rum and blood orange juice.
  • 3 fill glass with ice.
  • 4 top with a splash of ginger ale.

Blood Orange Sunrises

Ingredients

  • Servings: 4
  • 8 tablespoons apricots or 8 tablespoons peach nectar
  • 1 quart blood orange juice

Recipe

  • 1 pour 2 tablespoons nectar into each of 4 fluted glasses.
  • 2 holding a tablespoon right side up over nectar, pour in juice, allowing it to trickle from the bowl of the spoon into the glass (this will keep the colors separate).

Basic Pizza Dough

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 400 g plain flour
  • 2 teaspoons dried yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 250 ml warm water

Recipe

  • 1 put the flour, yeast and salt into a large bowl and make a well in the centre.
  • 2 pour in the warm water and use your hands to mix into a pliable dough.
  • 3 knead dough on a lightly floured work surface for around 5 minutes, making adjustments if it's too wet or dry.
  • 4 rub some oil over the surface of the dough and place in a bowl.
  • 5 cover with a clean tea towel and leave in a warm place for around 30 minutes.
  • 6 divide into 4 equal balls and knead them again before rolling each one out into the size and thickness of pizza you like.
  • 7 preheat oven to 240c, 475°f arrange toppings on your pizzas, minus any cheese and place in the oven for 10 minutes
  • 8 sprinkle over the cheese and return to the oven for 5-10 minutes.

Basic Rye Bread

  • 1 cup water
  • 4 tablespoons water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 1/2 cups bread flour
  • 1 tablespoon bread flour
  • 1 cup rye flour
  • 3 tablespoons sugar
  • 1 teaspoon caraway seed
  • 3 teaspoons yeast

Recipe

  • 1 cook on light cycle in your bread maker machine.

Baked Risotto Primavera (eating Well)

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 tablespoon extra-virgin olive oil
  • 2 medium onions, chopped (about 1 1/2 cups)
  • 1 cup brown rice (short or medium grain)
  • 3 garlic cloves, minced
  • 1/2 cup dry wine
  • 2 (14 1/2 ounce) cans low sodium chicken broth (or 3 1/2 c. vegetable broth)
  • 8 ounces asparagus, ends trimmed, cut into 1-inch pieces (2 cups)
  • 1 cup sugar snap peas or 1 cup snow peas, trimmed, cut into 1-inch pieces
  • 1 cup diced red bell pepper (1 medium)
  • 1 1/2 cups freshly grated parmesan cheese (3 1/2 oz.)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1 -2 teaspoon freshly grated lemon zest, preferably organic
  • fresh ground pepper, to taste

Recipe

  • 1 preheat oven to 425°.
  • 2 heat oil in a dutch oven or ovenproof deep saute pan over medium heat.
  • 3 add onions and cook/stir occasionally, until softened, 3-5 minutes.
  • 4 stir in rice and garlic; cook, stirring, 1-2 minutes.
  • 5 stir in wine and simmer until it has mostly evaporated.
  • 6 add broth and bring to a boil; cover the pan and transfer to the oven.
  • 7 bake until the rice is just tender, 50 minutes to 1 hour.
  • 8 shortly before the risotto is done, steam asparagus, peas, and bell pepper until crisp-tender, about 4 minutes.
  • 9 fold the steamed vegetables, parmesan, parsley, chives, lemon zest and pepper into the risotto (taste and add salt, if needed, too); serve immediately.

Apples & Cream Smoothie

Ingredients

  • Servings: 4
  • 2 cups low-fat vanilla ice cream
  • 1 cup unsweetened applesauce
  • 1/4 teaspoon ground cinnamon or 1/4 teaspoon apple pie spice
  • 1 cup nonfat milk or 1 cup 1% low-fat milk
  • ground cinnamon (optional)

Recipe

  • 1 in a blender container combine low-fat ice cream, applesauce, and the 1/4 teaspoon cinnamon or apple pie spice.
  • 2 cover and blend until smooth.
  • 3 add fat free skim or 1% lowfat milk.
  • 4 cover and blend until just mixed.
  • 5 pour into glasses.
  • 6 if desired, sprinkle each serving with additional cinnamon.
  • 7 serve immediately.

Avocado Zucchini Soup

Ingredients

  • 1 cup zucchini, diced
  • 1 cup chicken broth
  • 1 avocado
  • 1/4 cup onion, minced
  • 1 1/2 cups plain yogurt
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 dash cayenne pepper
  • 1 roma tomato, diced for garnish
  • 4 sprigs italian parsley (to garnish)

Recipe

  • 1 combine zucchini, broth, avocado (soft & ripe, pitted, peeled and cut into chunks) and onion in blender or food processor. puree.
  • 2 stir in sour cream, lemon juice, salt, pepper and cayenne pepper.
  • 3 refrigerate, covered, until thoroughly chilled.
  • 4 garnish each serving with sprinkles of diced tomatoes and sprigs of italian parsley. (can garnish with extra slices of fresh avocado, if desired.).
  • 5 serve with a fine loaf of bread for a great summer lunch.
  • 6 ("cooking time" is chilling time. if you use all your ingredients right from the fridge, you might not need to chill it.).

Berries Smoothie

  • 1 cup pineapple-orange juice
  • 1/2 cup mixed berry (frozen)
  • 1 medium banana

  • 1 place all ingredients in a blender.
  • 2 blend to desired consistency.

  • 1/4 cup light cream (or half-and-half or milk)

Recipe

  • 1 in a medium bowl, combine berries, lemon zest and sugar. gently toss, being careful not to break the blackberries and raspberries too much.
  • 2 allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
  • 3 serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

  • 1 wash apricots and soak for 4 hours in enough water to cover.

  • 1 over medium heat in a heavy saucepan, melt the margarine, then add the wine and stir in the apples.

  • 3 continue cooking for about 10 minutes, then stir in the lemon juice and vanilla.

Bergy Dim Sum #7, Mandarin Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1 tablespoon sesame oil

Recipe

  • 1 put unsifted flour in a bowl.
  • 2 pour in all the boiling water at once stirring with the handle of a wooden spoon (or use your mixer with the bread paddle mix and knead for 5 minutes).
  • 3 when the dough is cool enough to handle knead for 10 minutes (this step is not necessary if you used your mixer).
  • 4 whether you do this by hand or with the mixer the mixture is ready when it is a smooth, soft dough.
  • 5 cover the dough and let it rest for 30 minutes.
  • 6 roll dough into a cylindrical shape and cut into 10 equal pieces.
  • 7 keep covered with plastic wrap to prevent drying out.
  • 8 take one slice at a time and cut in two equal pieces.
  • 9 on a lightly floured board roll each piece into a 3" circle.
  • 10 brush one side of one of the 3" circle pancakes with sesame oil, brush the oil right to the edge.

  • 2 put the almonds and a little sugar in a mortar and pound with the pestle to a powder.
  • 3 (or use a food processor) beat the egg whites until stiff.

  • 2 buy a 400-500g (1lb)block of ricotta and cut in halves.

Berenjenas En Escabeche - Marinated Eggplant

  • 1 cup vinegar (red wine or )
  • 1/2 cup water
  • 1/2 cup olive oil

  • 2 garlic cloves, crushed
  • red pepper, crushed, to taste
  • salt, to taste

Recipe

  • 1 trim the ends off the eggplant.
  • 2 cut in in half lengthwise, and then lay it flat side down and cut into 1/4 to 1/2 inch slices.
  • 3 put the slices layer upon layer in a roasting pan.
  • 4 salt each layer with coarse salt and let sit for 2 hours. (the salt draws out the bitterness and moisture from the eggplant.)
  • 5 after two hours, drain and rinse the eggplant.
  • 6 put the eggplant, the vinegar and the water in a stock pot and bring to a boil.
  • 7 lower the heat to a simmer and cook the eggplant until it takes on a translucent look, about 35 minutes.
  • 8 meanwhile, combine the remaining ingredients in a bowl.
  • 9 when the eggplant has cooked through, drain off half of the vinegar/water and put the rest, along with the eggplant, in the bowl with the oil mixture. mix well.
  • 10 refrigerate until cold.

Basic Roasted Beetroot

Basic Pizza Sauce

Berberé (spicy Red Pepper Paste)

Ingredients

  • 1 teaspoon ground ginger
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon coriander
  • 1/2 teaspoon fenugreek seeds
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon clove
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1 small onion, minced
  • 2 garlic cloves, minced about 2 teaspoons
  • 2 tablespoons salt
  • 1/4 cup dry red wine
  • 2 cups sweet paprika
  • 1/4 cup hot paprika
  • 1 tablespoon ground red pepper
  • 1/2 teaspoon black pepper
  • 1 1/2 cups water
  • 2 tablespoons vegetable oil

Recipe

  • 1 toast ginger, cardamom, coriander, fenugreek, nutmeg, cloves, cinnamon and allspice in a heavy skillet for one to two minutes, stirring constantly. remove from heat and let spices cool.
  • 2 combine toasted spices, onion, garlic, 1 tablespoon of salt and the wine in a food processor or blender and process until mixture is a smooth paste. you can also pound mixture together in a large mortar & pestle.
  • 3 combine paprika`s, red pepper, black pepper and the other tablespoon of salt in the heavy skillet. toast over low heat one minute, stirring constantly.
  • 4 stir water into skillet slowly. add the spice paste. cook, stirring vigorously, over low heat for about 10 minutes.
  • 5 store berberé in a jar or crock. after it has cooled to room temperature, cover with a thin layer of oil. this layer should be replenished after each use to help preserve the spice mixture. store in refrigerator.

Basic Potato Wedges

  • 600 g potatoes (use large potatoes)
  • olive oil, to taste

Recipe

  • 1 put the kettle on.
  • 2 scrub the potatoes, cut each one in half lengthways and then in half again to make 4 long wedges.
  • 3 put the potato wedges into a saucepan, cover with boiling water and bring back to the boil. cook for about 5 minutes from the time that the water boils, then drain thoroughly.
  • 4 meanwhile, heat the grill. brush the drained potato wedges all over with olive oil, then put them on a baking sheet and place them under the grill.
  • 5 grill on high for 10-15 minutes, until the potatoes are tender right through and golden brown, turning them as necessary. remove from the grill, sprinkle them with sea salt and serve with toppings.
  • 6 variation *1: herbs - sprinkle with fresh rosemary or thyme before grilling. caraway seeds also work.

  • 8 ancho chilies, dried
  • 3 1/2 cups warm water
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1/4 cup vegetable oil
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon dried mexican oregano (regular will do)
  • 1 tablespoon cumin seed
  • 1 teaspoon salt

Recipe

  • 1 soak chiles in warm water until softened, about 30 minutes. drain; strain and reserve liquid. remove stems and seeds and membranes from the chiles. cook and stir onion and garlic in oil in a 2-qt. saucepan until onion is tender. add chiles and 2 cups of the reserved liquid , the tomato sauce, oregano, cumin and salt. simmer uncovered 20 minutes. cool.
  • 2 transfer to blender container; cover and blend on low speed until smooth. strain. refrigerate sauce no longer than 10 days.
  • 3 note: i strain mine in a mesh strainer or colander. it takes a few minutes, but keep thinking of how great this is going to taste!

Baked Rum Pineapple

  • 2 teaspoons cinnamon

  • 2 combine the molasses, brown sugar, cinnamon, butter and rum to form a paste. chill. remove from refrigerator at least 1/2 hour before using.

  • 4 cut the pineapples, including the leafy tops, into quarters. cut out the core and cut pineapple off of the skin and into bite size pieces. return it to the shell.
  • 5 place the pineapples onto foil lined baking sheets and cover the leafy tops with foil. brush the pineapple pieces with the rum mixture. cover with plastic until ready to bake.

  • 7 preheat oven to 350 degrees. bake the pineapple until glazed and brown, 12 to 15 minutes. arrange on a platter with toothpicks, and serve warm. bake one pineapple at a time, because this is always eaten up quickly, and you will want to have more to serve later in the party.

Basic Pizza Dough -paula Deen

  • 4 1/2-5 cups bread flour

  • cornmeal, for pan

Recipe

  • 1 preheat oven at 450 degrees f.
  • 2 measure out 1 3/4 cups warm water (it should be pleasantly warm on your wrist). sprinkle the yeast on top of the water and allow it to activate, about 10 minutes.
  • 3 put the salt and 2 cups of the flour into a food processor. pulse 5 times to blend. pour in the yeast and water and pulse 5 times. add the olive oil. add the remaining flour 1 cup at a time, pulsing and scraping the sides of the bowl until well blended. as soon as the mixture is combined, dump it out onto a well-floured board and knead for 15 turns, until the dough is smooth and elastic.
  • 4 place the dough in a greased bowl and turn to coat all sides. cover with plastic wrap or a tea towel. allow the dough to rise in a warm place for about 45 minutes, until doubled in size, then punch it down. divide it in half; each half will make 1 (12-inch) pizza.

  • 1 stir together the cornmeal, salt, and water in a slow cooker. cove and cook on high for 2 hours. stir the polenta. if it seems too thick, add in a little water, milk, broth, or cream. cook for 30 to 60 minutes more, until thick and creamy.

Baked Rolled Tacos

Ingredients

  • 1 large chicken breast, cooked and shredded
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/2 teaspoon cumin
  • 2 tablespoons chili powder
  • 3 garlic cloves (or 1 tsp garlic powder)
  • 2 cups red enchilada sauce
  • 1 cup water
  • 1/2 medium onion, diced
  • 1 cup 2% cheddar cheese, shredded
  • 16 corn tortillas

Recipe

  • 1 in a saucepan, mash the beans with a potato masher.
  • 2 add the chicken, cumin, chili powder, garlic, enchilada sauce, and water. (depending on how thin your enchilada sauce is, you may want to decrease the amount of water.).
  • 3 turn heat to low and simmer until all liquid is absorbed. if the mixture is too liquidy, strain through a cheesecloth.
  • 4 remove from heat and stir in half cup of cheese and the onions.
  • 5 preheat oven to 400°.
  • 6 to prevent cracking, prep the tortillas by wrapping them in a kitchen towel and placing in a metal colander over a covered pan of boiling water until they are hot and pliable.
  • 7 place 1/4 cup of filling lengthwise in the tortilla and roll the tortilla around it.
  • 8 place on a greased cookie sheet, seam-side down. (at this point, you may want to secure each with toothpicks, though i haven't found it necessary.).
  • 9 spray lightly with canola cooking spray and bake in preheated oven until taco shells are crispy.
  • 10 top with the remaining cheese and bake until melted.
  • 11 serve with taco sauce, homemade guacamole, and/or sour cream.

Blood Orange Champagne Cocktails

  • 1 cup shredded parmesan cheese

Recipe

  • 1 preheat oven to 350°.
  • 2 cook potatoes in lightly salted water for 5 minutes; drain and set aside.
  • 3 make sauce.
  • 4 cook onion and garlic in hot oil over medium heat until tender.
  • 5 stir in flour salt and pepper.
  • 6 add milk all at once.
  • 7 cook and stir until thick and bubbly.
  • 8 in a greased 2-1/2 quart baking dish, layer half of the potatoes. pour half of the sauce over the potatoes and sprinkle with half cup of cheese. repeat with remaining ingredients.
  • 9 bake covered for 35 minutes, uncover and bake another 35 minutes.
  • 10 let stand 10 minutes before eating.
