All-fruit Breakfast Smoothie

Ingredients

  • 1/2 small honeydew melon, seeded
  • 1 orange, peeled and sectioned
  • 1 apple, cored and sectioned
  • 1 peach, pitted
  • 10 strawberries, hulled
  • 1/2 cup pure oranges or 1/2 cup apple juice

Recipe

  • 1 add all the ingredients into a blender.
  • 2 whizz for about 15 seconds.
  • 3 pour into glasses and enjoy.

Baked Mac & Cheese

Ingredients

  • Servings: 8
  • 12 ounces elbow macaroni, uncooked
  • 1/2 cup nonfat sour cream
  • 12 ounces fat-free evaporated milk
  • 8 ounces low-fat cheddar cheese or 8 ounces colby cheese, shredded
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon table salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons dried breadcrumbs
  • 2 tablespoons fresh parmesan cheese, grated

Recipe

  • 1 preheat oven to 350ºf.
  • 2 cook pasta according to package directions without added fat or salt; drain and transfer to a large bowl. while pasta is still hot, stir in sour cream; set aside.
  • 3 heat milk in a small saucepan over medium heat until tiny bubbles appear just around the edges (known as scalding). reduce heat to low, add cheese and simmer until cheese melts, stirring constantly with a wire whisk, about 2 minutes; remove from heat and stir in mustard, salt, pepper and nutmeg.
  • 4 add cheese mixture to pasta; mix well. transfer to a 3-quart casserole dish.
  • 5 combine bread crumbs and parmesan cheese; sprinkle over pasta.
  • 6 bake until top is golden, about 30 minutes. yields about 1 cup per serving.

Betingan Makdous (stuffed Aubergine Pickle In Olive Oil)

Ingredients

  • Servings: 4
  • 8 small round baby aubergines
  • 3 tablespoons walnuts, chopped
  • 1 tablespoon chopped garlic
  • 1 teaspoon dry red chili pepper flakes
  • salt & freshly ground black pepper
  • 1 cup extra virgin olive oil

Recipe

  • 1 wipe clean the aubergines.
  • 2 poach aubergines in salted water for about 15 minutes until soft and then set aside to cool.
  • 3 once cool, squeeze very gently to get rid of the water.
  • 4 to make the stuffing, mix the chopped walnuts, chopped garlic and dry chilli flakes together and season with salt and pepper.
  • 5 cut a slit lengthwise down the middle of each aubergine but not right through, leaving the ends so as to form a pocket.
  • 6 stuff with the walnut mixture.
  • 7 pack the aubergines stem ends up in a completely sterile glass jar with a firm seal and cover with olive oil from time to time as you pack in the layers of aubergines.
  • 8 make sure the aubergines are submerged in oil.
  • 9 keep refrigerated until rich flavour develops, for about a week before serving.
  • 10 this will keep for a month in a refrigerator.

  • 1 cup irish steel cut oats
  • 4 cups water
  • 1/4 cup toasted walnuts, chopped

  • 2 cups flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 1 cup apple, chopped and peeled
  • 1/3 cup raisins

Recipe

  • 1 combine flour, brown sugar, baking powder, baking soda, cinnamon and salt in a large bowl.
  • 2 make a well in center.
  • 3 in a small bowl, stir together buttermilk, applesauce, egg whites and oil.
  • 4 pour into well of dry mix.
  • 5 stir just until evenly moistened.
  • 6 do not overmix.
  • 7 gently fold in apples and raisins.
  • 8 pour into lined muffin cups.
  • 9 bake at 400 degrees for 25 minutes or until toothpick inserted in center comes out clean.

  • 1 cup cider vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon garlic, minced
  • 2 stalks green onions, minced
  • 1 tablespoon sugar
  • 1/2 teaspoon black pepper

  • 1 combine the ingredients in a mixing bowl and set aside for an hour before use.

Apple Pull Apart Bread

Ingredients

  • 2 (8 ounce) cans pillsbury grands refrigerated buttermilk biscuits
  • 1 (21 ounce) can apple pie filling
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons milk

Recipe

  • 1 heat oven to 400 degrees f. lightly grease a 10-inch tube pan.
  • 2 in food processor, chop fruit filling by pulsing several times.
  • 3 flatten each biscuit into a 5 to 6-inch circle.
  • 4 spoon about 2 tablespoons fruit filling onto each biscuit and seal edges to form a ball.
  • 5 in a small bowl, combine sugar and cinnamon.
  • 6 roll each biscuit ball in sugar mixture. make 2 rings of biscuits in tube pan and sprinkle with remaining sugar mixture.
  • 7 bake for 55 minutes, covering biscuits with foil after 20 minutes of baking time.
  • 8 cool on wire rack 5 minutes; loosen biscuits from edge of pan and remove from pan.
  • 9 in a small bowl, combine confectioners sugar and milk; blend well.
  • 10 drizzle over warm biscuits. serve.

Aubergine And Hommus Grills

Ingredients

  • Servings: 4
  • 2 aubergines, thickly sliced lengthways
  • 2 teaspoons vegetable oil, plus extra for brushing
  • 3 slices bread, crusts removed, any type
  • 300 g hummus

Recipe

  • 1 lay aubergine slices flat on baking sheet.
  • 2 brush with oil and season.
  • 3 grill 15 minutes, turning twice, brushing with oil till slices are softened and cooked through.
  • 4 meanwhile whizz bread into crumbs.
  • 5 add 2 tsp oil, whizz again.
  • 6 spread some hommus on each eggplant slice.
  • 7 tip breadcrumbs onto plate.
  • 8 press hommus side of aubergine into crumbs to coat.
  • 9 grill again, hommus side up till golden -about 3 or 4 minutes.

Blueberry And Lemon Pikelets

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 cup sugar
  • 2 egg whites (or 1 egg)
  • 1 1/2 cups soymilk (or milk)
  • 1 tablespoon finely grated fresh lemon rind
  • 1/2 cup blueberries (fresh or frozen)

Recipe

  • 1 combine dry ingredients then add egg whites, soy milk, and lemon zest.
  • 2 mix to smooth batter and add blueberries.
  • 3 heat a non-stick pan sprayed lightly with cooking spray over medium heat.
  • 4 cook tablespoons of mixture for 1-2 minutes per side.

Betha Thamathe - Tomatoes And Eggs

Ingredients

  • Servings: 1
  • egg (however many you feel like eating)
  • 1 fresh large tomato
  • seven spices
  • salt
  • pepper
  • paprika
  • cilantro (fresh or dried)
  • parsley (fresh or dried)
  • olive oil
  • 1/2 yellow onion

Recipe

  • 1 dice the yellow onion half into tiny tiny bits on one plate, and dice the tomato into small pieces on another plate. (yes this dish makes a bit of a mess if you want to substitute the tomato you can use a can of diced tomatoes instead you will use a proportional amount to the number of eggs you are making).
  • 2 put olive oil in the pan, you will want to cover the bottom of the frying pan, this is going to saute the onion, tomatoes and eggs so make sure it coats the bottom. you can also use 3 table spoons of butter for this (no one said this recipe was healthy) .
  • 3 put in the onions and saute them until they are soft, add seven spices (this is also called allspice), paprika, salt and pepper to taste. usually you want to sprinkle it across the pan, but don't use too much allspice cause it has a strong flavor.
  • 4 after you have mixed the onions and seasonings together, mix in the tomatoes. saute these for about a minute making sure to mash the tomato pieces. it makes more sauce that way and brings out the flavor).
  • 5 add eggs and cover the frying pan.
  • 6 cook until egg whites are cooked but egg yolks are still a bit runny and you are done!
  • 7 uncover, put in a plate and eat with bread! pita bread is usually best but sliced bread works too :)

Ingredients

  • 1 cup milk
  • 1 (7 ounce) package sun-maid dried fruit or 1 cup seedless raisin
  • 1 cup light brown sugar
  • 1 cup all-bran cereal
  • 1 cup self rising flour

Recipe

  • 1 mix milk, brown sugar, all-bran and fruitbits (or raisins) in large bowl.
  • 2 let sit for 2 hours.
  • 3 after 2 hours, mix in self-rising flour.
  • 4 grease a 9x5x3 loaf pan or put paper liners in muffin tin.
  • 5 spoon batter into loaf pan or into muffin cups 3/4 full.
  • 6 for bread, bake at 350 degrees fahrenheit for 1 hour and 10 minutes.
  • 7 for muffins bake 20-25 minutes.

Atlantic City Sour Cream Biscuits

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fat free sour cream

Recipe

  • 1 in a medium-large bowl, blend flour, baking soda, baking powder and salt together with a whisk. add sour cream and mix into a stiff dough.
  • 2 using floured hands, turn dough out onto a floured board. flour a rolling pin and roll dough to a 1/2-inch thickness. cut biscuits with a biscuit cutter or simply with the rim of a drinking glass.
  • 3 place biscuits on an ungreased cookie sheet and bake in a pre-heated 400 degree f oven for 15-20 minutes, or until biscuits are golden brown.

Apple Preserves

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 7 cups cored peeled sliced tart apples (sliced 1/4 inch thick, granny smith)
  • 1 cup apple juice
  • 2 tablespoons strained fresh lemon juice
  • 1/2 teaspoon unsalted butter (this is correct)
  • 5 cups sugar
  • 1 (3 ounce) envelope liquid pectin
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Recipe

  • 1 in an 8-quart pot, combine apples, apple juice, lemon juice, and butter.
  • 2 over medium heat, bring the apple mixture to a boil; decrease heat and simmer, covered, until the apples are tender, about 8-10 minutes.
  • 3 remove the cover; add in sugar, 1 cup at a time, stirring gently between each addition.
  • 4 heat, stirring occasionally, until the sugar is completely dissolved.
  • 5 increase heat to medium-high and bring mixture to a full rolling boil, stirring constantly.
  • 6 stir in all the pectin; return to a full boil, stirring constantly.
  • 7 boil, stirring constantly, 1minute.
  • 8 remove pan from heat; skim off any foam.
  • 9 gently stir in the nutmeg and cinnamon until combined.
  • 10 to prevent floating fruit, allow the preserves to cool 5 minutes before filling the jars.
  • 11 gently stir the preserves to distribute the fruit.
  • 12 ladle the preserves into hot sterilized jars, leaving ¼ inch headspace.
  • 13 wipe the jar rims and threads with a clean, damp cloth.
  • 14 cover hot lids and apply screw rings.
  • 15 process half-pint jars in a 200° f water bath for 10 minutes; pint jars for 15 minutes.

All-bran Apple Oatmeal.

Ingredients

  • 1 cup water
  • 1/4 cup rolled oats
  • 1/2 cup all-bran cereal (original)
  • 1 teaspoon cinnamon (or whatever you prefer)
  • 1 pinch salt
  • 1 teaspoon walnuts (chopped) (optional)
  • 1 small apple (chopped)
  • 1/4 cup milk (or preferred amount)

Recipe

  • 1 pour 1 cup of water into a small pot and add salt. bring to a boil.
  • 2 once the water is good and hot, add 1/4 cup of rolled oats, and stir in cinnamon. let it simmer for about 5 to 8 minutes or until oats are cooked to your preferred consistency.
  • 3 add 1/2 cup all-bran to the oats, and let cook for about 1 minute or until it thickens to your preference.
  • 4 pour contents into bowl and sprinkle walnuts over top as well as chopped apple.
  • 5 pour milk in and mix it together. enjoy!
  • 6 if you like it sweeter add a little honey or brown sugar.

Apple Raisin Honey Wheat Bread

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 3 large egg whites
  • 2 tablespoons melted butter
  • 2 large apples, cored and each cut in 8 slices and then cut thin width wise
  • 1 1/4 cups unsweetened applesauce
  • 2 tablespoons cinnamon
  • 1/2 cup dark brown sugar
  • 1 cup raisins
  • 2 tablespoons honey
  • 2 tablespoons milk

Recipe

  • 1 in a mixing bowl combine whole wheat flower, baking powder, baking soda, cinnamon, and sugar.
  • 2 in a separate bowl combine the dark brown sugar, egg whites, butter, honey, and milk.
  • 3 with a mixer combine the wet ingredients with the dry ingredients on medium low speed for 15 seconds then add the apple pieces and raisins and mix on same speed for additional 25 seconds. batter should be lumpy with apples and raisins but moist looking. spray a large loaf pan with non stick baking spray before putting batter in oven at 350 for 50 minutes knife should come out clean when inserted in center of loaf to know its done. enjoy!

  • 3 cups apples, peeled and sliced
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup margarine, softened
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup brown sugar, packed
  • 3 tablespoons flour
  • 1 tablespoon margarine
  • 1 teaspoon vanilla
  • 1 1/2 cups hot water

Recipe

  • 1 put apples and 1/2 cup sugar in a 3 litre casserole.
  • 2 sprinkle with cinnamon.
  • 3 cream margarine and 1/2 cup sugar.
  • 4 stir in egg.
  • 5 stir in the vanilla.
  • 6 combine dry ingredients and add to creamed mixture alternately with the milk, ending with dry ingredients.
  • 7 spoon over apples.
  • 8 combine brown sugar and flour.
  • 9 stir in margarine, vanilla and hot water.
  • 10 pour over the batter, holding a spoon under it to disperse the water.
  • 11 do not stir.
  • 12 bake, uncovered, at 350f.
  • 13 for 45 minutes or until apples are soft and pudding is firm to the touch.

Bayou Lamb Chops

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 lamb chops, trimmed
  • 1 medium onion, chopped
  • 1 small green pepper, sliced
  • 1/2 cup celery, sliced
  • 2 garlic cloves, minced
  • 1 (14 ounce) can stewed tomatoes, drained
  • 1 (4 ounce) can chopped green chilies
  • 2 tablespoons chopped fresh parsley
  • salt and pepper
  • 4 cups cooked rice

Recipe

  • 1 spray large skillet with cooking spray; heat over medium heat until hot. cook lamb chops until browned, 3-4 minutes per side. remove from skillet.
  • 2 add onion, bell pepper, celery and garlic to skillet; saute until tender 3-4 minutes.
  • 3 stir in tomatoes and chilies; heat to boiling.
  • 4 reduce heat and simmer, uncovered, 5 minutes.
  • 5 add lamb chops; simmer, covered, until lamb chops are tender, about 20 minutes.
  • 6 stir in parsley. season to taste with salt and pepper. serve over rice.

Blueberry Applesauce (for Babies)

  • 2 medium apples, peeled, cored & sliced

Recipe

  • 1 combine all in small saucepan.

  • 4 mash if necessary.
  • 5 freeze in ice cube trays.

Blueberry And Nut Baklava Spirals

Ingredients

  • 425 g john west blueberries, well drained and placed onto absorbent paper towelling
  • 100 g ground almond meal
  • 50 g hazelnuts, chopped
  • 2 tablespoons caster sugar
  • 1/2 teaspoon cinnamon
  • 10 sheets phyllo pastry
  • olive oil, spray
  • icing sugar, for dusting

Recipe

  • 1 drain the blueberries thoroughly in a colander, add a bit of pressure by pressing down on them with the palm of your hand to release excess moisture and leave standing on absorbent paper towelling for a few minutes while you proceed with step two. then pat dry with the paper towelling.
  • 2 in a medium bowl combine the nuts, sugar and cinnamon.
  • 3 gently fold in the thoroughly drained john west blueberries.
  • 4 place the pastry sheet onto the bench with the longest edges horizontally in front of you, spray 1 sheet of pastry with cooking spray, arrange 2 tablespoons of the blueberry nut filling along the longest edge, fold over and roll up.
  • 5 spray the rolled pastry with more oil, coil it around and gently ease it into a greased 12 x 1/2 cup muffin pan. repeat with the remaining pastry and filling.
  • 6 spray the baklava with a little extra oil and bake in a preheated oven at 200ºc for 15 minutes.
  • 7 dust with icing sugar and serve.
  • 8 serving options: serve with honey, maple syrup or a berry sauce.

Best Vegetable Chowder

Ingredients

  • Servings: 4
  • 3 potatoes, diced and cooked
  • 1 carrot, peeled and shredded
  • 3 stalks celery, sliced
  • 1 medium onion, chopped
  • 1 cup chopped mushroom
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • salt
  • 1 (8 ounce) can creamed corn

Recipe

  • 1 cooked diced potatoes and shredded carrots in salted water.
  • 2 drain and set aside.
  • 3 sauté onion, mushrooms and celery in butter until onion is transparent; add to potato mixture.
  • 4 in pan, heat 2 tbsp butter.
  • 5 add flour and salt.
  • 6 mix well, then lower heat, and add milk slowly.
  • 7 stir until mixture (called a roux) thickens.
  • 8 add potato/vegetable mixture and a can of creamed corn.
  • 9 heat through and serve.
  • 10 sometimes i add cooked diced bacon, or sliced wieners for flavor.
  • 11 my family is crazy about this hearty chowder which really 'sticks to the ribs'.

  • 1 boil the milk in a big pan and simmer till it becomes half.

Baked Lemon Rice Pilaf

Ingredients

  • Servings: 12
  • 4 1/2 cups chicken broth (36 oz) or 4 1/2 cups vegetable stock (36 oz)
  • 3 tablespoons butter
  • 1 cup onion, diced
  • 2 1/2 cups long grain rice, uncooked
  • 2 lemons, juice and zest of, finely zested
  • 3 bay leaves
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 heat stock, bringing to boil and then down to simmer.
  • 3 melt the butter in a large non stick skillet over medium heat. add onions and cook for 2 minutes or until the onion is softened. add the rice and stir to coat the rice with butter. cook 3 minutes stirring often so that the rice does not burn.
  • 4 transfer rice to large baking dish. pour in hot stock. stir in lemon juice, zest, bay leaves, salt and pepper.
  • 5 cover pan tightly with aluminum foil and bake for 25-30 minutes or until all liquid is absorbed and the rice is tender.
  • 6 fluff the rice just before serving and garnish with lemon slices and sliced green onion if desired.

  • 1 cup soymilk
  • 2 tablespoons lemon juice
  • 1 2/3 cups whole wheat pastry flour
  • 1/3 cup soy flour
  • 1/4 cup grits
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup unsweetened applesauce
  • 1/3 cup sugar
  • 1 teaspoon egg substitute, powder
  • 1/4 cup water
  • 1 medium apple, peeled and diced and drizzled with lemon juice
  • 1/2 cup golden raisin
  • 1/2 cup walnuts
  • cinnamon
  • ground nutmeg

Recipe

  • 1 preheat oven 350.
  • 2 coat 18 muffin cups with cooking spray
  • 3 mix whole wheat flour and 1/3 c soy flour,.
  • 4 1/4 c soy grits. ( if you dont have soy regular grits work so i am told).
  • 5 1 teaspoon baking soda,1 teaspoon baking powder,1/2 teaspoon salt,.
  • 6 1 tsp cinnamon into a meduim bowl and set aside.
  • 7 cream the applesauce and sugar in a large bowl,
  • 8 whisk the egg replacer with water in a small bowl until foamy, and then whisk in the 1/4 c unsweetened applesauce and 1/3 cup sugar. add to that the soy milk and vanilla, and mix thougoughly-
  • 9 fold in the wet ingredients into the dry ingredients just until mixed.
  • 10 fold in the walnut pieces with the soy grits and add to the batter the raisins and apples.
  • 11 do not over beat.
  • 12 spoon batter into muffin cups. and filling any empty cups with water
  • 13 bake for 15 minutes or until toothpick comes out clean.

  • 1 wash, core, and peel the apples; cut them into eighths.
  • 2 you should have about 2 pounds of chopped apples.
  • 3 combine the water and sugar in a large saucepan; bring to a boil.

  • 2 separate and stretch biscuits until they are 5 inches in diameter. place on greased cookie sheet.
  • 3 combine sugar, cinnamon, and cheese in a bowl.
  • 4 place apple slices on biscuits. top with cheese mixture.
  • 5 bake for 25 minutes, or until biscuits are golden brown on the bottom. serve at room temperature.

Blueberry And Meyer Lemon Marmalade

  • 1/2 lb meyer lemon
  • 1 lb meyer lemon
  • 2 lbs blueberries
  • 5 1/2 cups sugar
  • 1/3 cup strained lemon juice

Recipe

  • 1 day 1, morning: take the 1/2 pound of lemons and cut them into eighths. place these in a non-reactive saucepan where they will fit snugly in a single layer. add enough cold water for the fruit to bob freely. cover tightly and let rest for 8 hours at room temperature.
  • 2 day 1, afternoon: after 8 hours have passed, bring the pan with the lemon eighths and water to a boil over high heat, then decrease the heat to medium-low. cook the fruit at a lively simmer, covered, for 2 hours - the lemons will become very soft and the liquid will become slightly syrupy. as the lemons cook, press down on them gently with a spoon every 30 minutes or so, adding a little more water if necessary. the water level should remain consistently high enough for the fruit to remain fully submerged as it cooks.
  • 3 when the lemons are finished cooking, strain their juice by pouring the hot fruit and liquid into a fine mesh strainer or jelly bag set over a medium bowl. cover the whole setup with plastic wrap and let drip overnight at room temperature.
  • 4 meanwhile, prepare the meyer lemon slices.
  • 5 to prepare the meyer lemon slices: take the pound of meyer lemons and halve them lengthwise, then cut each half into quarters (each lemon will be cut into 8 pieces at this point). take each lemon slice and pry out any seeds from it. you can place these seeds in the pot with the lemon eighths and water which is currently simmering - this will add more pectin.
  • 6 slice each meyer lemon slice thinly crosswise - how thick you slice is a personal preference. i prefer to slice very thinly, making each slice 1/8th of an inch or less. but if you like you could make your slices thicker. i wouldn't recommend going much thicker than 1/4 of an inch.
  • 7 place these meyer lemon slices (they will look like a lot of little triangles) in a stainless steel pot and cover with water, covering the slices by 1 inch. bring to a boil over high heat, then decrease the heat to medium and simmer for 5 minutes. drain, discarding the liquid. return the lemon slices to the pot and cover with 1 inch of cold water. bring to a boil over high heat, decrease the heat to medium-low, and cook at a lively simmer, covered, for 20 minutes. as the fruit cooks, stir it gently every 10 minutes or so, adding a little more water if necessary. the water level should stay consistently high enough for the fruit to remain submerged as it cooks. after 20 minutes, remove the pan from the heat, cover tightly, and let rest overnight at room temperature.
  • 8 day 2, morning: remove the plastic wrap from the lemon eighths and their liquid and discard the lemons remaining in the strainer or jelly bag. do not squeeze the bag or press down on the lemons if you want a clear jelly in your marmalade. set this liquid aside.
  • 9 pour the meyer lemon slices and their liquid through a fine mesh strainer (or a jelly bag), and let this mixture drip for about 15 minutes. remove the meyer lemon slices from the strainer - do not discard - set them aside. mix the cooked liquid you have strained from the lemon eighths and the meyer lemons, mixing well, and set aside. you will need 4 1/2 cups of this liquid. if you do not have 4 1/2 cups, add water to the mixture until it equals 4 1/2 cups.
  • 10 in a large preserving pan, combine the blueberries with 1 1/2 cups of sugar. i use a potato masher to mash up some of the blueberries, about a third of them, but you don't have to do this. i just feel that it gets the juices flowing quicker. bring the blueberries and sugar to a simmer, stirring frequently, and then continue to cook until the juices are just deep enough to cover the berries, about 5 minutes.
  • 11 pour the berries into a colander set over a large bowl, and stir the berries gently to drain off the juice. set the colander of berries on a plate (to catch any remaining juice) and set them aside.
  • 12 in a large preserving pan, combine the 4 1/2 cups of mixed liquid from the lemons, the juice from the blueberries, and the meyer lemon slices. if you do not have a preserving pan, use the widest pan you have. the wider the pan, the more quickly moisture will evaporate from the mixture, and this is what you want when you are making jelly, jam, or marmalade.
  • 13 place 4 saucers or small plates in the freezer. you will use these later to check the set of the marmalade.
  • 14 bring the mixture to a boil over high heat, and cook at a rapid boil over high heat until the mixture is reduced by half, stirring occasionally. it will take about 35 minutes for the mixture to reduce by half.
  • 15 once the mixture is reduced by half, add in the blueberries and any accumulated juice, the strained lemon juice, and the remaining 4 cups sugar, stirring well over high heat to help dissolve the sugar.
  • 16 cook at a boil over high heat, stirring every 2 minutes or so, until the set point is reached. check the set after 5 minutes of cooking.
  • 17 to check the set: take the pot of marmalade off the heat (if you don't remove the marmalade from the heat while you check the set it could over-cook and become rubbery or hard, if the marmalade is indeed already set).
  • 18 place a drop of the marmalade mixture (try to get the "jelly" part of the mixture, avoiding the rind and the berries; i use a 1/4 teaspoon measure to dip out the drop) on one of the saucers you've kept in the freezer, & place the saucer back in the freezer for 1 minute. after 1 minute, take the saucer out of the freezer and nudge the drop of jelly with your finger. if it "wrinkles" when you nudge it with your finger it is done. if the jelly is not set, continue cooking over medium-high heat, checking the set again every 5 minutes.
  • 19 i make this marmalade using an 11 quart copper preserving pan, over highest heat on my second largest burner. after the sugar has been added and has dissolved, it usually takes 10 minutes of cooking for the marmalade to reach the set point for me.
  • 20 when the marmalade is set, ladle it into sterilized canning jars, leaving 1/4" headspace. wipe the rims of the jars with damp paper towels to remove any marmalade which got on the rims or the threads. place the lids and the bands on the jars, just tightening the bands fingertip tight.
  • 21 process in a boiling water bath for 5 minutes, then remove and let sit, undisturbed, for at least 12 hours before checking seals. it is important to let them sit undisturbed for 12 hours because the sealing compound on the lids is still cooling and hardening, completing the seal. while the jars cool, you will hear a "plink" type sound from each jar - this is the jars completing the vacuum seal as the final air escapes the jar. after 12 hours have passed, remove the bands and check the lids - press down in the center of the lid. if you cannot push the lid down any further, the jar is sealed. if the lid "gives" a bit, and you can push it down, the jar did not seal. you can either put the band back on the jar, and reprocess it for another 5 minutes, or you can just put it in the fridge and use it within 3 months.

  • 1/2 teaspoon salt
  • 3 -4 teaspoons cornstarch (optional)
  • ground cinnamon (for garnishing)

Recipe

  • 1 using a sharp knife, carefully cut enough kernels off the corn cobs to make 3 to 3 1/2 cups. then scrape the cobs with a knife to remove all their milk. place 2 1/2 cups of the corn in a blender along with 2 cups of the water and puree well.
  • 2 strain the pureed corn through a sieve into a medium saucepan and discard the solids. stir in the remaining corn kernels, 1/3 cup sugar and salt.
  • 3 bring the liquid to a boil over medium-high heat, then reduce heat to low and simmer for 5 minutes, or until lightly thickened. if the atol doesn't thicken to a creamy consistency, mix the cornstarch with a little cold water and whisk into the simmering liquid until it is just thick enough to coat a spoon.
  • 4 pour the hot atol into mugs or small bowls, sprinkle with a little cinnamon and serve hot with a spoon to scoop up the corn kernels.
  • 5 variations: frozen corn can be used in a pinch, but the flavor won't be nearly as good.
  • 6 note: because the corn used in central america is starchier, you may have to add the suggested cornstarch to achieve the lightly thickened consistency.

Bluebarb Jam

Bbq Bananas

  • 60 ml dark rum (4 tablespoons)
  • 50 g demerara sugar (2 oz)
  • 1 large orange, juice and zest of (grated)
  • 2 1/2 ml ground cinnamon (1/2 teaspoon)
  • 25 g butter (1 oz) or 25 g margarine (1 oz)
  • orange slice, to decorate
  • whipped cream or ice cream, for serving

Recipe

  • 1 cut 4 large rectangles of baking foil, peel the bananas (keeping them whole) and lay one on each piece of foil. stab them carefully in several places with a small toothpick.
  • 2 mix together rum, sugar, orange juice and cinnamon, add to each parcel and place 1/4 of the butter on top of the banana in each parcel.
  • 3 carefully join up the long sides of the foil over the banana and fold over several times to seal, then fold up the short ends of the foil so that the liquid can not escape during cooking.
  • 4 place the parcels on the bbq and grill for 15 minutes, turning them over once after 7 minutes.
  • 5 open the parcels carefully and transfer to serving dishes, pour over liquid that is left in the foil, decorate with orange slices and serve with whipped cream or icecream.
