Apple Raisin Muffins

Ingredients
- 1 cup soymilk 
- 2 tablespoons lemon juice 
- 1 2/3 cups whole wheat pastry flour 
- 1/3 cup soy flour 
- 1/4 cup grits 
- 1 teaspoon baking soda 
- 1 teaspoon baking powder 
- 1/2 teaspoon salt 
- 1 teaspoon cinnamon 
- 1/4 cup unsweetened applesauce 
- 1/3 cup sugar 
- 1 teaspoon egg substitute, powder 
- 1/4 cup water 
- 1 medium apple, peeled and diced and drizzled with lemon juice 
- 1/2 cup golden raisin 
- 1/2 cup walnuts 
-  cinnamon 
-  ground nutmeg 
Recipe
- 1 preheat oven 350. 
- 2 coat 18 muffin cups with cooking spray 
- 3 mix whole wheat flour and 1/3 c soy flour,. 
- 4 1/4 c soy grits. ( if you dont have soy regular grits work so i am told). 
- 5 1 teaspoon baking soda,1 teaspoon baking powder,1/2 teaspoon salt,. 
- 6 1 tsp cinnamon into a meduim bowl and set aside. 
- 7 cream the applesauce and sugar in a large bowl, 
- 8 whisk the egg replacer with water in a small bowl until foamy, and then whisk in the 1/4 c unsweetened applesauce and 1/3 cup sugar. add to that the soy milk and vanilla, and mix thougoughly- 
- 9 fold in the wet ingredients into the dry ingredients just until mixed. 
- 10 fold in the walnut pieces with the soy grits and add to the batter the raisins and apples. 
- 11 do not over beat. 
- 12 spoon batter into muffin cups. and filling any empty cups with water
