Apple Raisin Muffins

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 cup soymilk
  • 2 tablespoons lemon juice
  • 1 2/3 cups whole wheat pastry flour
  • 1/3 cup soy flour
  • 1/4 cup grits
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup unsweetened applesauce
  • 1/3 cup sugar
  • 1 teaspoon egg substitute, powder
  • 1/4 cup water
  • 1 medium apple, peeled and diced and drizzled with lemon juice
  • 1/2 cup golden raisin
  • 1/2 cup walnuts
  • cinnamon
  • ground nutmeg

Recipe

  • 1 preheat oven 350.
  • 2 coat 18 muffin cups with cooking spray
  • 3 mix whole wheat flour and 1/3 c soy flour,.
  • 4 1/4 c soy grits. ( if you dont have soy regular grits work so i am told).
  • 5 1 teaspoon baking soda,1 teaspoon baking powder,1/2 teaspoon salt,.
  • 6 1 tsp cinnamon into a meduim bowl and set aside.
  • 7 cream the applesauce and sugar in a large bowl,
  • 8 whisk the egg replacer with water in a small bowl until foamy, and then whisk in the 1/4 c unsweetened applesauce and 1/3 cup sugar. add to that the soy milk and vanilla, and mix thougoughly-
  • 9 fold in the wet ingredients into the dry ingredients just until mixed.
  • 10 fold in the walnut pieces with the soy grits and add to the batter the raisins and apples.
  • 11 do not over beat.
  • 12 spoon batter into muffin cups. and filling any empty cups with water
  • 13 bake for 15 minutes or until toothpick comes out clean.
