Beth's Amazing Black Bean Chili

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 (15 ounce) cans black beans
  • 2 (15 ounce) cans diced tomatoes with green chilies
  • 4 whole roma tomatoes
  • 1 whole green bell pepper
  • 1 whole yellow sweet bell pepper
  • 1 whole red sweet bell pepper
  • 2 cups sliced mushrooms
  • 1 1/2 cups vidalia onions
  • 1 tablespoon olive oil
  • 1 tablespoon garlic (to taste)

Recipe

  • 1 dice the roma tomatoes and cut the bell peppers and onion into chunky pieces. set aside.
  • 2 put the olive oil in a large pot and heat it to medium heat.
  • 3 add the garlic and allow to brown slightly.
  • 4 add the onions and allow them to soften slightly. you don't want them completely clear, just softened.
  • 5 add the cut up bell pepper pieces.
  • 6 add the cans of tomatoes and chilies, the black beans, and the diced roma tomatoes. mix well.
  • 7 allow to mixture to come to a boil.
  • 8 add mushrooms and reduce heat to a simmer.
  • 9 simmer for 20 minutes.
