Beth's Amazing Black Bean Chili

Ingredients
- Servings: 6
- 2 (15 ounce) cans black beans 
- 2 (15 ounce) cans diced tomatoes with green chilies 
- 4 whole roma tomatoes 
- 1 whole green bell pepper 
- 1 whole yellow sweet bell pepper 
- 1 whole red sweet bell pepper 
- 2 cups sliced mushrooms 
- 1 1/2 cups vidalia onions 
- 1 tablespoon olive oil 
- 1 tablespoon garlic (to taste) 
Recipe
- 1 dice the roma tomatoes and cut the bell peppers and onion into chunky pieces. set aside. 
- 2 put the olive oil in a large pot and heat it to medium heat. 
- 3 add the garlic and allow to brown slightly. 
- 4 add the onions and allow them to soften slightly. you don't want them completely clear, just softened. 
- 5 add the cut up bell pepper pieces. 
- 6 add the cans of tomatoes and chilies, the black beans, and the diced roma tomatoes. mix well. 
- 7 allow to mixture to come to a boil. 
- 8 add mushrooms and reduce heat to a simmer.
