Bayou Lamb Chops

Ingredients
- Servings: 4
- 4 lamb chops, trimmed 
- 1 medium onion, chopped 
- 1 small green pepper, sliced 
- 1/2 cup celery, sliced 
- 2 garlic cloves, minced 
- 1 (14 ounce) can stewed tomatoes, drained 
- 1 (4 ounce) can chopped green chilies 
- 2 tablespoons chopped fresh parsley 
-  salt and pepper 
- 4 cups cooked rice 
Recipe
- 1 spray large skillet with cooking spray; heat over medium heat until hot. cook lamb chops until browned, 3-4 minutes per side. remove from skillet. 
- 2 add onion, bell pepper, celery and garlic to skillet; saute until tender 3-4 minutes. 
- 3 stir in tomatoes and chilies; heat to boiling. 
- 4 reduce heat and simmer, uncovered, 5 minutes. 
- 5 add lamb chops; simmer, covered, until lamb chops are tender, about 20 minutes.
