Aubergine And Hommus Grills

Ingredients
- Servings: 4
- 2 aubergines, thickly sliced lengthways 
- 2 teaspoons vegetable oil, plus extra for brushing 
- 3 slices bread, crusts removed, any type 
- 300 g hummus 
Recipe
- 1 lay aubergine slices flat on baking sheet. 
- 2 brush with oil and season. 
- 3 grill 15 minutes, turning twice, brushing with oil till slices are softened and cooked through. 
- 4 meanwhile whizz bread into crumbs. 
- 5 add 2 tsp oil, whizz again. 
- 6 spread some hommus on each eggplant slice. 
- 7 tip breadcrumbs onto plate. 
- 8 press hommus side of aubergine into crumbs to coat. 
- 9 grill again, hommus side up till golden -about 3 or 4 minutes.
