Banana Oatmeal Breakfast Muffins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup rolled oats
  • 1/2 small banana
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/8 cup dried cranberries
  • 2 large egg whites

Recipe

  • 1 preheat oven or toaster oven to 350.
  • 2 prepare a muffin tin.
  • 3 mash the banana in a bowl.
  • 4 mix in the dry ingredients.
  • 5 add egg whites and mix well.
  • 6 pour into muffin tins.
  • 7 bake 15 minutes at 250.
  • 8 makes 2 large or 4 small muffins.
