Black Currant And Tofu Whip

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 350 g tofu, crumbled
  • 500 g black currants or 500 g blackberries
  • 3 -4 tablespoons maple syrup
  • 3 -4 tablespoons creme de cassis (optional)
  • 1/2 teaspoon vanilla extract
  • 30 g hazelnuts, toasted and chopped

Recipe

  • 1 wash the currants or blackberries.
  • 2 put the tofu, berries, syrup and vanilla in a blender/food processor and puree until smooth.
  • 3 roast your hazelnuts in a pan until golden-brown.
  • 4 then chop them in the food processor.
  • 5 add the creme de cassis if desired.
  • 6 pour the berry whip into individual serving dishes.
  • 7 put in the refrigerator until ready to serve.
  • 8 finally, garnish with the toasted nuts.
