Barley Pilaf

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 teaspoon sesame oil
  • 1 medium onion, chopped
  • 14 ounces chicken broth
  • 1 cup barley (quick cooking)
  • 10 ounces frozen peas and carrots, thawed
  • 2 tablespoons chopped fresh parsley (optional)

Recipe

  • 1 heat oil over medium heat. add onion; saute 3-5 minutes or until translucent. raise heat; add broth and bring to a boil. add barley; cover, lower heat and simmer 10 minutes.
  • 2 remove from heat. stir in veges. cover and let stand 5 minutes. top with parsley just before serving.
