Barley Pilaf

Ingredients
- Servings: 4
- 1 teaspoon sesame oil
- 1 medium onion, chopped
- 14 ounces chicken broth
- 1 cup barley (quick cooking)
- 10 ounces frozen peas and carrots, thawed
- 2 tablespoons chopped fresh parsley (optional)
Recipe
- 1 heat oil over medium heat. add onion; saute 3-5 minutes or until translucent. raise heat; add broth and bring to a boil. add barley; cover, lower heat and simmer 10 minutes.
- 2 remove from heat. stir in veges. cover and let stand 5 minutes. top with parsley just before serving.
