Applesauce Yogurt Fool

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • pomegranate seeds (optional)
  • 2 cups thick chunky applesauce
  • 1 tablespoon light brown sugar
  • 1/2 cup dark rum or 1/2 cup bourbon or 1/2 cup apple cider
  • 1 cup golden raisin
  • 1/2 cup coarsely chopped toasted pecans or 1/2 cup hazelnuts
  • cinnamon stick (optional)
  • 1 (8 ounce) carton low-fat vanilla yogurt

Recipe

  • 1 combine raisins and liquor or apple cider in a small saucepan, and cook over low heat about 10 minutes or until raisins are warm and softened.
  • 2 remove from heat and let stand for 10 minutes to cool.
  • 3 drain off any liquid that has not been absorbed.
  • 4 stir together raisins, nuts, and brown sugar; set aside.
  • 5 to serve, divide half of the raisin and nut mixture among six stemmed glasses or parfait glasses.
  • 6 layer applesauce and yogurt in glasses, forming two to four layers.
  • 7 top each serving with remaining raisin and nut mixture.
  • 8 garnish with pomegranate seeds and cinnamon sticks, if desired.
