Applesauce Yogurt Fool

Ingredients

- pomegranate seeds (optional)
- 2 cups thick chunky applesauce
- 1 tablespoon light brown sugar
- 1/2 cup dark rum or 1/2 cup bourbon or 1/2 cup apple cider
- 1 cup golden raisin
- 1/2 cup coarsely chopped toasted pecans or 1/2 cup hazelnuts
- cinnamon stick (optional)
- 1 (8 ounce) carton low-fat vanilla yogurt
Recipe
- 1 combine raisins and liquor or apple cider in a small saucepan, and cook over low heat about 10 minutes or until raisins are warm and softened.
- 2 remove from heat and let stand for 10 minutes to cool.
- 3 drain off any liquid that has not been absorbed.
- 4 stir together raisins, nuts, and brown sugar; set aside.
- 5 to serve, divide half of the raisin and nut mixture among six stemmed glasses or parfait glasses.
- 6 layer applesauce and yogurt in glasses, forming two to four layers.
- 7 top each serving with remaining raisin and nut mixture.
- 8 garnish with pomegranate seeds and cinnamon sticks, if desired.
