Artichoke And Mushroom Kabobs

Ingredients
- Servings: 4
- 2 (9 ounce) packages frozen artichoke hearts
- 1 pint fresh mushrooms
- 1 pint cherry tomatoes
- 3/4 cup italian dressing (will need more if adding other veggies)
- salt and pepper
Recipe
- 1 cook artichoke hearts as directed on package; drain.
- 2 combine artichoke hearts, mushrooms and dressing.
- 3 cover and let stand about 4 hours at room temperature or overnight in the refrigerator.
- 4 if broiling preheat broiler.
- 5 alternately thread artichoke hearts and mushrooms on skewers with cherry tomatoes. broil or grill about 5 to 6 minutes, basting occasionally with dressing. season with salt and pepper.
- 6 serve hot with additional dressing.
