Artichoke And Mushroom Kabobs

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 2 (9 ounce) packages frozen artichoke hearts
  • 1 pint fresh mushrooms
  • 1 pint cherry tomatoes
  • 3/4 cup italian dressing (will need more if adding other veggies)
  • salt and pepper

Recipe

  • 1 cook artichoke hearts as directed on package; drain.
  • 2 combine artichoke hearts, mushrooms and dressing.
  • 3 cover and let stand about 4 hours at room temperature or overnight in the refrigerator.
  • 4 if broiling preheat broiler.
  • 5 alternately thread artichoke hearts and mushrooms on skewers with cherry tomatoes. broil or grill about 5 to 6 minutes, basting occasionally with dressing. season with salt and pepper.
  • 6 serve hot with additional dressing.
