Black Eyed Pea Sausage

Ingredients

  • Servings: 8
  • 1 cup black-eyed peas, cooked and mashed
  • 1/4 cup flour
  • 1 egg, lightly beaten
  • 1/4 teaspoon sage
  • 2 tablespoons oil

Recipe

  • 1 mix peas, flour, egg, and sage.
  • 2 shape into 8 patties.
  • 3 heat oil in skillet over medium heat.
  • 4 cook patties in oil over medium heat until lightly brown on both sides, 4 to 5 minutes per side.
