Beer-battered Onion Rings

Ingredients

- 1 medium onion, sliced into 1cm rings
- 45 g plain flour
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 95 ml chilled lager beer
- vegetable oil, for frying
Recipe
- 1 heat your oven to around 120-150c, just for keeping your onion rings warm.
- 2 mix together the flour, baking powder and salt in a bowl and then whisk in the beer until you have a thinish smooth batter.
- 3 separate the onion rings and put a third of them into the batter, covering well.
- 4 heat about 1 inch of vegetable oil in a small pan to 190°c.
- 5 use a fork to transfer the onion rings one at a time to the hot oil and fry for a couple of minutes until crisp and golden. remove with a slotted spoon or tongs and place on some kitchen paper to drain, then transfer to a sheet of foil in the oven. repeat with the other two batches.
- 6 serve whilst hot.
