Blue Potato Oven Fries

Ingredients
- Servings: 4
- 3 lbs potatoes (blue, red, or fingerlings)
- 2 tablespoons olive oil
- 1 teaspoon course ground salt
- 1/2 teaspoon ground pepper
Recipe
- 1 preheat oven to 450 degrees.
- 2 cut potatoes into 1/2" wedges. drop in cold water and soak 45 - 60 minutes.
- 3 thouroughly drain potatoes and pat dry with paper towels.
- 4 toss potatoes with oil and salt and pepper.
- 5 place in shallow baking pan and bake 20 minutes; stir and cook an additional 20 minutes.
