Baked Rhubarb

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 cups chopped rhubarb
  • 1 cup honey
  • 2 egg whites

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 spray a glass baking dish with non-stick spray like pam, and set aside.
  • 3 in a saucepan, combine rhubarb and honey and simmer until rhubarb is tender, about 10 minutes.
  • 4 beat egg whites until stiff.
  • 5 in the baking dish, fold together half of beaten egg whites and the rhubarb/honey mixture.
  • 6 spoon remaining egg whites over top.
  • 7 bake for 15 minutes, or until lightly browned.
