Basic Fresh Tomato Sauce

Ingredients

  • 2 onions, medium-sized, finely chopped
  • 4 garlic cloves, minced
  • 1/3 cup olive oil
  • 5 lbs fresh tomatoes (about 12 medium-sized ones)
  • 1/2 cup green onion ( and green parts minced)
  • 1 green pepper, seeded and chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon anise seed, crushed
  • 1 tablespoon oregano leaves, crushed
  • 1 teaspoon rosemary, crushed
  • 1 teaspoon paprika
  • 2 cups dry red wine (to taste)

Recipe

  • 1 in a large dutch oven, cook onions and garlic in olive oil over medium heat until golden brown (about 15 minutes), stirring occasionally.
