Blackberry Soup With Peaches

Total Time: 1 hr 7 mins Preparation Time: 12 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 2 pints blackberries, rinsed
  • 1/4 cup water
  • 6 tablespoons sugar, divided
  • 4 large ripe peaches, peeled and sliced
  • powdered sugar

Recipe

  • 1 set aside 1 cup blackberries for sprinkling on the finished soup.
  • 2 place remaining berries and water in nonreactive 4 qt saucepan.
  • 3 cover, bring to a simmer over medium heat, cook 5 minutes.
  • 4 place sieve over a bowl and press the berries to remove the seeds.
  • 5 stir in 3 t sugar until dissolved, more if you like it sweeter.
  • 6 chill for 1 hour.
  • 7 toss the peach slices with the remaining sugar.
  • 8 ladle soup into 4 soup plates.
  • 9 arrange peach slices in the soup.
  • 10 sprinkle with powdered sugar.
