Basic Fresh Pasta

Total Time: 36 mins Preparation Time: 30 mins Cook Time: 6 mins

Ingredients

  • Servings: 8
  • 3 cups semolina flour
  • 3/4 cup water
  • 3 egg whites

Recipe

  • 1 in a large bowl, make a well with the semolina. add the egg whites and work in well. add the water and mix into a soft dough. work in excess flour until it is dry and stiff, about 10 minutes. place dough in a plastic bag and let it rest in the refrigerator for at least 1 hour. 6-24 hours is better. this will keep in the refrigerator at least one week.
  • 2 when ready to make pasta, take a small portion of the dough. run it through a pasta machine or kitchen aid with pasta attachment. run it through until it gets to one or two on the machine. let it hang to dry for 30-60 minutes and it is ready to be cooked. you can also dry and store in freezer bags. cook in simmering water for approximately 6-8 minute.
