Blackberry Flummery

Ingredients

  • Servings: 6
  • 1 quart blackberry
  • 1/2 cup sugar
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Recipe

  • 1 wash and pick over berries.
  • 2 stir together berries, water, and sugar; heat to boiling.
  • 3 make a thin paste of cornstarch and 2 additional tbs of water.
  • 4 add cornstarch paste slowly to berries and cook 15 minutes, stirring constantly until thickened.
  • 5 add lemon juice.
  • 6 chill.
  • 7 suggested serving: in sherbet glasses lined with strips of sponge cake.
