Blackberry Flummery

Ingredients

- 1 quart blackberry
- 1/2 cup sugar
- 1 cup water
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Recipe
- 1 wash and pick over berries.
- 2 stir together berries, water, and sugar; heat to boiling.
- 3 make a thin paste of cornstarch and 2 additional tbs of water.
- 4 add cornstarch paste slowly to berries and cook 15 minutes, stirring constantly until thickened.
- 5 add lemon juice.
- 6 chill.
- 7 suggested serving: in sherbet glasses lined with strips of sponge cake.
