Applesauce Oatmeal Muffins

Ingredients

- 1 1/2 cups oats
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup 2% low-fat milk
- 1/2 cup brown sugar, firmly packed
- 3 tablespoons vegetable oil
- 1 egg , lightly beaten
Recipe
- 1 heat oven to 400°f; line twelve medium muffin cups with paper baking cups or spray bottoms only with cooking spray.
- 2 for muffins, combine oats, flour, baking powder, baking soda and cinnamon in large bowl; mix well.
- 3 in medium bowl, combine applesauce, milk, sugar, oil and egg ; blend well. add to dry ingredients all at once; stir just until dry ingredients are moistened. (do not overmix).
- 4 fill muffin cups almost full.
- 5 bake 20 to 22 minutes or until deep golden brown. cool muffins in pan on wire rack 5 minutes. remove from pan. serve warm.
