Basic Cabbage Soup Recipe

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 1 head cabbage
  • 6 carrots
  • 6 medium onions
  • 6 green onions
  • 2 red peppers or 2 green peppers
  • 3 large tomatoes
  • 5 stalks celery, trimmed
  • 1/2 cup brown rice
  • salt, to taste
  • fresh ground black pepper, to taste

Recipe

  • 1 cut cabbage, carrots, onions, green onions, peppers, tomatoes, and celery into bite-size pieces.
  • 2 place vegetables in a large stock pot and cover with water.
  • 3 bring water to a boil and simmer uncovered for 10 minutes.
  • 4 cover and simmer until the vegetables are soft, about 45 minutes.
  • 5 meanwhile, cook the brown rice according to package directions.
