Barley With Peppers And Potatoes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 6 poblano chiles, large, sliced
  • 2 medium onions, chopped
  • 1 tablespoon olive oil
  • 2 1/2 lbs red potatoes, unpeeled, coooked and cubed
  • 2 cups barley, cooked
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon cumin
  • salt
  • cayenne pepper

Recipe

  • 1 saute chilies and onions in olive oil in a large skillet until crispy tender, about 5 minutes.
  • 2 add potatoes, saute until browned about 5 to 8 minutes.
  • 3 add barley to skillet; cook over medium heat until hot through, about 4 to 5 minutes.
  • 4 stir in cilantro and cumin.
  • 5 season to taste with salt and cayenne pepper.

Autumn-spiced Cranberry Sauce

Ingredients

  • 3 tablespoons butter flavor crisco (you can also use 3 tablespoons crisco butter shortening sticks if you want)
  • 1/2 cup onion, minced
  • 1 (16 ounce) can whole berry cranberry sauce
  • 3/4 cup apple butter, smuckers brand recommended
  • 1/8 teaspoon ground cloves
  • 1/2-1 teaspoon orange peel

Recipe

  • 1 heat shortening in medium saucepan over medium heat. add onions; sauté about 2 minutes or until slightly softened.
  • 2 add cranberry sauce, apple butter and cloves. reduce heat. simmer 5 minutes, stirring occasionally. stir in orange peel. serve warm or at room temperature.

Barley Water

Ingredients

  • 1/2 cup pearl barley
  • 2 1/2 quarts boiling water
  • 2 lemons
  • 6 oranges
  • brown sugar (to taste)

Recipe

  • 1 place barley in a large saucepan. pour boiling water over and simmer over low heat, covered, for about 1 hour.
  • 2 squeeze juice from fruit, reserving rinds.
  • 3 strain water from cooking the barley into a large bowl. add the rinds of 1 lemon and 3 oranges. add sugar. allow to sit until completely cooled.
  • 4 strain liquid again to remove rinds. add juices. transfer to a jug or bottle and store in refrigerator.

Blackfoot Potato Soup

Ingredients

  • Servings: 4
  • 1 lb bulk sausage (either hot or mild)
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 tablespoons flour
  • 14 ounces chicken stock
  • 1/2 cup water
  • 4 cups diced potatoes
  • 1 cup milk
  • 1/2 lb fresh green beans, cut into 1-inch pieces

Recipe

  • 1 blanch the green beans or cook to desired doneness.
  • 2 in a large sauce pan, break up and brown the sausage. remove from the pan.
  • 3 in pan drippings, saute the onion and celery until tender, then add the flour and cook further for a minute or two.
  • 4 add the stock and water, deglazing the pan, and heat to the boil.
  • 5 add the potatoes and simmer, covered until tender, about 25 minute
  • 6 puree 2 cups of the mixture, return to the pan, add the sausage, beans and milk and heat through.

Ingredients

  • 250 g dried apricots, chopped
  • 250 g raisins, seedless
  • 3 liters vinegar, cider
  • 4 large onions, finely chopped
  • 4 garlic cloves, crushed
  • 500 g brown sugar
  • 200 g almonds, flaked
  • 1 1/2 tablespoons salt
  • 3 tablespoons ground ginger
  • 2 tablespoons ground coriander
  • 2 tablespoons mustard seeds
  • 3 teaspoons chili powder

Recipe

  • 1 combine the apricots, raisins and vinegar in a 5-litre (5-quart) saucepan. soak overnight to plump the fruit. alternatively, if time is tight, simply cover, bring to the boil and set aside for about 2 hours.
  • 2 add the remaining ingredients, and cook uncovered over medium heat, stirring occasionally at first, then constantly towards the end of the cooking time, until the chutney has reduced to about one-third, and is beautifully thick.
  • 3 it should take 1 1/2-2 hours. to know when it is ready for bottling, test the consistency by putting a little in the freezer to cool.

  • 2 next day add egg and self-rising flour. mix well.
  • 3 pour into greased loaf pan and bake 1 to 1 1/4 hours at 350° .
  • 4 slice when cooled and spread with butter.

Alsatian Lentil Soup With Bratwurst

Ingredients

  • Servings: 8
  • 1 lb brown lentils, rinsed and picked over
  • 4 bratwursts
  • 4 celery ribs, chopped
  • 2 medium carrots, peeled and chopped
  • 2 medium leeks, trimmed, well washed, and chopped
  • 1 bay leaf
  • 1/2 teaspoon chopped fresh thyme
  • salt
  • fresh ground pepper
  • 8 cups water
  • creme fraiche or sour cream

Recipe

  • 1 in a large slow cooker, combine all the ingredients except for the creme fraiche.
  • 2 cover and cook on low for 6-8 hours or until the lentils are tender.
  • 3 discard the bay leaf.
  • 4 remove the bratwurst and cut it into slices.
  • 5 stir the slices into the soup; taste for seasoning and adjust.
  • 6 serve the soup hot, topping each bowl with a dollop of creme fraiche.

Ingredients

  • 2 tablespoons butter
  • 1/4 cup sliced almonds
  • 1 yellow onion, chopped
  • 1 garlic clove, minced
  • 2/3 cup brown rice
  • 1/3 cup pearl barley, rinsed and drained
  • 2 1/4 cups chicken stock
  • 1/4 cup dry wine
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt

Recipe

  • 1 preheat oven to 350.
  • 2 in medium skillet, over medium heat, melt butter. add almonds and stir until lightly browned, about 2 mintues. add onion and garlic and saute until tender about 5 minutes.
  • 3 stir in rice and barley. add stock, wine and seasonings. stir and bring to a boil.
  • 4 transfer to 2 1/2-quart casserole lightly coated with cooking spray. cover and bake until rice and barley are tender and liquid is absorbed, about 1 hour and 15 minutes.

Apricot Bellinis

Ingredients

  • 2 (15 ounce) cans apricot halves, drained (don't mix the 2 cans together)
  • 2 (11 1/2 ounce) cans apricot nectar (don't mix the 2 cans together)
  • 1/2 cup sugar, divided
  • crushed ice
  • 1 (750 ml) bottle sparkling wine or 1 (750 ml) bottle champagne, chilled
  • fresh mint sprig (optional, for garnish)

Recipe

  • 1 process half each of apricot halves, apricot nectar, and sugar in a blender until smooth, stopping to scrape down sides. repeat with remaining apricot halves, nectar, and sugar.
  • 2 serve over crushed ice with sparkling wine/champagne or ginger ale/lemon-lime soda. garnish, if desired. * note: you can stir together the the apricot mixture and the sparking wine/champagne/soda in a picture. be sure and do this just before serving.

  • 1/2 cup chopped yellow onion

  • 3/4 cup firmly packed dark brown sugar
  • 1/4 cup dark soy sauce
  • 2 tablespoons l&p worcestershire sauce
  • 2 tablespoons pureed chipotle chiles (chipotle puree)

Recipe

  • 1 heat the oil in a saucepan over medium heat.
  • 2 add the onion, garlic, cumin and chile powder and saute until onions are soft.
  • 3 add the malt vinegar and deglaze, stirring and scraping the bottom of the saucepan to loosen all the brown bits.
  • 4 add the rest of the ingredients and simmer until slightly thickened.
  • 5 transfer to a blender or food processor, and blend until smooth.
  • 6 refridgerate until ready to use, up to 3 days.

Avocado & Serrano Salsa

  • 1/2 cucumber, seeded & diced
  • 2 ripe hass avocadoes, peeled,pitted,& coarsely chopped
  • 1 red onion, diced
  • 2 serrano chilies, finely chopped

Recipe

  • 1 in a large glass or ceramic bowl, combine the cucumber, avocados, onion& chiles.
  • 2 toss well.
  • 3 gently stir in the salt, pepper& lime juice.
  • 4 (take care, or the avocado will get mushy.) serve immediately, or cover& refrigerate for up to 1 day.
  • 5 (return to room temperature before serving).

Barney J's Polish Potato Soup

Ingredients

  • Servings: 4
  • 1 large onion, cubed very fine
  • 3 stalks celery, cut not too fine
  • 5 large potatoes, cubed
  • 1 pinch sugar
  • 3 cups water, to boil potatoes
  • 2 chicken bouillon cubes (optional) or 2 vegetable bouillon cubes (optional)
  • 1/2 pint sweet cream or 1/2 pint half-and-half or 1/2 pint milk
  • salt and pepper (no salt if using bouillon)

Recipe

  • 1 saute celery and onion in a little butter until slightly tender but not brown.
  • 2 cook potatoes and pinch of sugar in 3 cups of water until tender. (if using bouillon cubes, add before boiling potatoes. use no salt in the water if using the bouillon cubes. add in the celery and onions.
  • 3 add 1/2 pint of sweet cream (can use milk), bring to simmer. or use half-and-half.
  • 4 add salt (if needed) and pepper to taste. paprika for coloring. sprinkle with parsley.
  • 5 you can sneak in a pat of butter before serving.
  • 6 cooking tips: add as much milk or cream as necessary to suit your taste.
  • 7 mash or crush potatoes to suit your taste. or not!
  • 8 don't sub or add dry milk; it gives an off-flavor.

Ingredients

  • 3 cups flour
  • 6 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup avocado, well mashed, about 1 medium avocado
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla extract
  • 2 cups water

Recipe

  • 1 preheat oven to 350f (175c). oil and line two 8 or 9-inch pans (i used two 6-inch cakes and made 6 cupcakes with the extra batter). set aside.
  • 2 in a medium bowl, sift together the flour, cocoa, salt, baking powder and baking soda set aside.
  • 3 whisk together the sugar, oil, mashed avocado, vinegar and vanilla, then add the water. sift in the dry ingredients all at once, then whisk until smooth.
  • 4 pour batter into prepared tins and bake for 30 to 40 minutes, until a toothpick inserted comes out clean.
  • 5 let cakes cool in pan for 10 minutes, then turn out onto a rack to cool completely.

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 mix together flour, baking powder, and salt in a large bowl.
  • 3 gradually stir in water until a thick dough forms.
  • 4 turn onto a lightly floured board and knead until the dough is not sticky. it does not need to be perfectly smooth.
  • 5 grease a 9 x 13 baking pan.
  • 6 take a rolling pin and flatten dough until it is roughly the size of the pan.
  • 7 place dough in pan and adjust to fit.
  • 8 bake for 35 minutes. the bread should be slightly brown.
  • 9 turn out out on cutting board or cooling rack. this bread can be cut while warm.

Blackened Sweet Eggplant (aubergine)

Ingredients

  • Servings: 4
  • 4 firm eggplants (aubergine)
  • 1 pinch ground cumin
  • 1 garlic clove, pounded to paste
  • extra virgin olive oil
  • 2 lemons, juice of (or to taste)
  • salt

  • chopped fresh cilantro or fresh basil (optional) or fresh parsley (optional)

Recipe

  • 1 place eggplants in a tray and cook at the top of the oven for about 35 minutes, until the insides are very soft and the outsides dry and almost crisp.
  • 2 remove from the oven, slit the skin and scrape out the flesh.
  • 3 add cumin and garlic, stir in and break up. (you can make this smooth or coarse, depending on how you like it.) add olive oil to loosen. add lemon juice and season, to taste.

  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 cups cooked brown rice
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon dill weed
  • 1/8 teaspoon fresh ground black pepper
  • 1/3 cup crumbled feta cheese, divided

Recipe

  • 1 saute onion, mushrooms, and garlic in oil until tender.
  • 2 stir in rice, spinach, lemon juice, salt, dill, and pepper.
  • 3 reserve 1 tablespoon cheese and stir remaining cheese into skillet; mix well.
  • 4 transfer to sprayed 8-inch square baking dish and sprinkle with reserved cheese.

  • 2 cups cooked rice
  • 1 (10 ounce) package frozen chopped spinach, thawed, save liquid
  • 1/2 lb firm silken tofu
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon basil

Recipe

  • 1 heat oven to 325°f.
  • 2 in a blender, blend tofu, salt, 2 tablespoons olive oil, and 2 tablespoons of spinach liquid until creamy.
  • 3 heat 1 tablespoon olive oil in a large skillet or wok and saute onion and garlic.
  • 4 stir in the rice, pepper, and spices ( i use basil and a tiny pinch of thyme, but you could sub what you like), spinach, and the creamed tofu.
  • 5 spray a 1 1/2 quart dish with cooking spray and transfer rice into dish. bake, uncovered, for 30 minutes.

Apricot And Strawberry Smoothie

  • 1/4 cup strawberry, hulled and cut into quarters
  • 6 ounces non-fat vanilla yogurt

Barley-leek Soup With Mini Chicken Meatballs

Ingredients

  • Servings: 10
  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil
  • 3 leeks, and pale green parts, chopped
  • 3 garlic cloves, minced
  • 1/2 lb cremini mushroom, slied
  • 2 tablespoons tomato paste
  • 1/4 cup dry wine
  • 2 cups pearl barley
  • 8 cups chicken broth, plus more if needed
  • 1 lb ground chicken
  • 1/2 cup grated parmesan cheese
  • 1/4 cup plain dried breadcrumbs
  • 2 tablespoons minced flat leaf parsley
  • 1 tablespoon tomato paste
  • salt
  • fresh ground pepper
  • 1/2 cup chopped fresh parsley

Recipe

  • 1 in a large, heavy pot, melt the butter with the oil over med-high heat.
  • 2 add the leeks and garlic and saute until very soft, about 5 minutes.
  • 3 add the mushrooms and cook, stirring often, until they begin to soften, about 5 minutes.
  • 4 add the tomato paste and wine, stir to combine, and cook for 4 minutes.
  • 5 add the barley and 8 cups broth and bring to a boil.
  • 6 decrease the heat to low, cover, and simmer until the barley is tender, about 45 minutes.
  • 7 meanwhile, to make the meatballs, preheat the oven to 375°.
  • 8 oil a baking sheet.
  • 9 in a bowl, combine the chicken, parmesan, bread crumbs, 2 tbsp parsley, and tomato paste.
  • 10 add 1 tsp salt and 1/2 tsp pepper and stir to combine.
  • 11 the mixture will be very sticky.
  • 12 to form the meatballs, use two small spoons to scoop up the mixture and transfer it to the prepared sheet.
  • 13 bake until the meatballs are cooked through and no longer pink in the center, 10-12 minutes.
  • 14 add the meatballs to the soup and stir in gently.
  • 15 if the soup is too thick, add more broth and heat through.
  • 16 season with salt and pepper and serve, garnished with parsley.

  • 1 cut a v shape under stem of each strawberry and discard. cut berries in half lengthwise across the v to form a heart.
  • 2 lay berries in a single layer on baking sheets. freeze until solid, at least 1 hour; flex pan to release frozen fruit.
  • 3 in a 4 1/2-quart or larger bowl, mix cranberry juice cocktail concentrate with sparkling water. add frozen berries.

Alton Brown Seedy Crisps

  • 4 3/4 ounces all-purpose flour, plus additional for rolling
  • 1/3 cup poppy seed
  • 1/3 cup sesame seeds
  • 1 1/2 teaspoons table salt

  • 3 tablespoons olive oil
  • 6 1/2 ounces water

Recipe

  • 1 in a medium bowl whisk together both flours, poppy seeds, sesame seeds, salt, and baking powder. add the oil and stir until combined. add the water and stir to combine and create a dough. turn the dough out onto a floured surface and knead 4 to 5 times. divide the dough into 8 equal pieces, cover with a tea towel and allow to rest for 15 minutes.
  • 2 preheat the oven to 450 degrees f.
  • 3 for a thin snacking cracker: on a lightly floured surface, roll out 1 piece of dough to 1/16-inch and place on a parchment lined baking sheet. if there is room on the sheet pan, repeat with a second piece of dough. bake on the middle rack of the oven for 4 minutes then flip and bake for an additional 2 to 3 minutes or until golden brown. remove from the oven and place on a cooling rack. when cool, break into desired size pieces. repeat procedure with remaining dough.
  • 4 for a thicker dipping cracker: on a lightly floured surface, roll out the dough as above but to 1/8-inch thick. bake for 6 minutes on the first side, then flip and bake another 4 to 6 minutes.
  • 5 for super even thickness and easy rolling: roll out using a lightly floured pasta roller. flatten the dough until it will pass through the first setting and go to the highest number that your pasta roller will allow without tearing the dough. bake according to the thin cracker instructions.
  • 6 note: baking times will vary depending on exact thickness of dough and oven temperature, so watch them closely. store in an airtight container for up to 2 weeks.

  • 1 preheat oven to 350.
  • 2 add oil to large saucepan or roasting pan. heat on top of stove.

  • 4 add tomatoes, broth, and barley. turn heat to high. bring to boil. stir often.
  • 5 add the first six herb ingredients and mix well. cover, reduce heat to simmer and let cook for 5 minutes. at this point, stir in any leftover meat.
  • 6 place covered pan in oven and cook about 30-40 minutes. check and stir after 30 minutes. add more liquid, if necessary. remove bay leaves before serving.

  • 1 in container of electric blender, combine half of the raspberries, creme soda, yogurt,lemonade concentrate and sugar. cover;blend until berries are pureed and sugar is dissolved.pour mixture into a 13x9-inch pan.
  • 2 repeat process with the remaining ingredients.pour into same pan. cover; freeze 3 hours, or until firm.
  • 3 use a fork to break up frozen raspberry mixture.in container of electric blender,combine half of the frozen mixture and 1 cup club soda.

Blackberry Liqueur

  • 3 cups 80 proof vodka

  • 3 cups ripe blackberries

  • 1 shake together the water, vodka and sugar to dissolve sugar.
  • 2 gently mix together with the blackberries, taking care not to cut or crush the berries.
  • 3 leave to infuse about 10-12 days until the berries have lost most of their color.
  • 4 pour thru a fine strainer and discard the berries.
  • 5 pour into decorative bottles.

  • 3 tablespoons cornstarch
  • 4 tablespoons granulated sugar or 4 tablespoons splenda sugar substitute
  • 1/8 teaspoon salt
  • 2 cups milk
  • 1 teaspoon vanilla, clear if possible
  • 2 ounces unsweetened chocolate (optional)

Recipe

  • 1 mix the cornstarch, sugar, and salt with 1/4 cup of cold milk.
  • 2 in a small pot, heat the remaining milk over low heat (do not boil!).
  • 3 while whisking, slowly add the cold milk mixture to the heated milk, stirring constantly, in a heavy bottomed pan or a double boiler.
  • 4 continue to cook over low heat, whisking constantly, for 15 minutes until the raw taste of the cornstarch disappears and it thickens. (do not boil!). it will thicken all at once at the end of the cooking time.
  • 5 let cool, then add the vanilla.
  • 6 cover and chill.
  • 7 for chocolate blancmange, when you heat the milk, add 2 oz. unsweetened chocolate and stir until smooth.
  • 8 can pour into decorative 1/4-1/2 cup dishes.

Berry Cheesecake Soaked Oatmeal

  • 2 cups rolled oats
  • 1/4 cup lemon juice
  • 3 cups water
  • 2 cups milk
  • 1/2 cup cream cheese
  • 1 1/2 cups blueberries
  • 5 -6 tablespoons strawberry jam
  • caramel sauce (to garnish)

Recipe

  • 1 to soak oatmeal, put oats and 4 tbs lemon juice in a 1 quart glass mason jar, fill with water, stir, and soak 12-24 hours.
  • 2 rinse oats, add to 2 quart saucepan. add milk and heat til boiling at medium high heat, stirring occasionally. reduce heat and simmer until oatmeal reaches desired consistency, about 5-10 minutes.
  • 3 while oatmeal thickens, thaw blueberries in microwave, on timed defrost setting for 5 minutes.
  • 4 add blueberries, cream cheese, and jam to oatmeal. stir until combined. garnish with caramel sauce (if you've been good), or eat as is! store leftovers in the refrigerator and reheat the next morning for an even easier breakfast (but just as healthy (kinda))!

Barry's Beer Bread

  • 2 in a mixing bowl, mix all the ingredients listed above. don't over mix or under mix, mix it just right.

  • 4 according to barry, take a sip of the beer before adding.
  • 5 note: i've used various types of beers and find the the best are the lager's but any will do.

Baked Tofu And Bok Choy

  • 1 tablespoon gluten-free oyster sauce or 1 tablespoon extra tamari

  • 1 heat oil in a sauté pan. sauté ginger and garlic.
  • 2 add bok choy and place julienned carrot and sliced tofu on top of bok choy.
  • 3 in a small bowl, mix 2 tbsp of water, oyster sauce and tamari and pour over the vegetables and tofu.
  • 4 cover and cook until the vegetables are soft.
  • 5 (optional) sprinkle some crushed red pepper.

  • 2 just before serving, gently stir in lemon-lime soda. serve over ice.

  • 1 preheat oven to 350f and spray a baking pan with cooking spray.

  • 4 approximately 8-10 minutes depending on the size and ripeness of the tomatoes.

Apricot And Orange Chutney

Ingredients

  • 2 lbs dried apricots, chopped and soaked
  • 5 oranges
  • 3 medium onions, chopped
  • 3 cups raw sugar
  • 2 1/2 teaspoons coriander seeds, crushed
  • 1 tablespoon coarse salt
  • 2/3 cup raisins
  • 2 1/2 cups vinegar

Recipe

  • 1 put the oranges whole into boiling water. boil for 5 minutes. remove from water and cool.
  • 2 peel oranges and remove pith. cut peel into thin strips.
  • 3 chop the oranges into small bits. be sure to collect all the juice. remove seeds.
  • 4 strain the apricots and put them in a saucepan with the oranges and remaining ingredients. mix well.
  • 5 bring to a boil. reduce heat and simmer for about 1 hour or until the chutney is thick and the apricots are soft. stir frequently.
  • 6 pour the chutney into warm sterilized jars and seal.
  • 7 keep for a couple of days before eating.

Barona Valley Ranch Fry Bread

  • 1/4 teaspoon salt
  • 3/4 cup hot water
  • 1 1/2 teaspoons baking powder
  • 4 tablespoons shortening

  • 1 mix the salt and baking powder in the flour.
  • 2 cut the shortening into the flour mixture until well blended.
  • 3 place all into the spiral mixer and add the water slowly to form the dough.
  • 4 mix gently for several minutes and check for dough feel.
  • 5 remove from the mixer and place on the bench.
  • 6 divide dough into 4 small rounds and knead until firm.
  • 7 place under wet towels and let rest.
  • 8 for the fry bread, break off 2 ounce pieces and roll round and flat.
  • 9 cook in hot oil at 500 degrees for several seconds on each side.
  • 10 the finished product should be soft and light in texture absorbing little to no oil.
  • 11 practice makes perfect!

  • 3 tablespoons cold butter or 3 tablespoons margarine
  • 1/2 cup milk

  • 1 in a saucepan, combine sugar, cornstarch, cinnamon and nutmeg. stir in water; bring to a boil over medium heat. boil and stir for 1 minute; reduce heat. add apricots and butter, heat through. pour into a greased 2-quart baking dish. for topping, combine flour, sugar, baking powder and salt in a bowl; cut in butter until crumbly. stir in milk just until moistened. spoon over hot apricot mixture. bake at 400 degrees for 30-35 minutes or until golden brown and a toothpick inserted into the topping comes out clean.

  • 15 ounces soft silken tofu
  • 1 tablespoon butter
  • 1/2 large onions or 1/2 large yellow onion, sliced into rings
  • 6 ounces button mushrooms, sliced
  • 4 teaspoons flour
  • 1/2 cup low-fat milk
  • 1/4 cup low-fat plain yogurt
  • salt
  • pepper
  • dried thyme
  • oil
  • nonstick cooking spray

Recipe

  • 1 preheat oven to 425°f.
  • 2 dry the tofu and cut it into 4 thick slices.
  • 3 coat the tofu thinly with oil and sprinkle with salt, pepper, and thyme to taste.
  • 4 lay the tofu slices on a baking sheet sprayed with nonstick spray and place in oven. bake for 35 minutes, flipping pieces after 20 minutes.
  • 5 while the tofu cooks, melt the butter in a medium skillet on medium-low heat. saute the onions and mushrooms in the melted butter until softened, about 10 minutes. do not brown the vegetables.
  • 6 about 5 minutes before the tofu finishes, add the flour to the mushrooms and onions and continue to cook on medium-low for another minute or two.
  • 7 add the milk and yogurt to the sauteed mixture and bring to a simmer. you may need to raise the heat to medium.

Barley And Long Grain Rice

  • 1/4 cup chicken stock

  • 4 ounces low-fat cheddar cheese or 4 ounces gruyere cheese, shredded

  • 1 preheat the oven to 400°. halve the squash lengthwise and sprinkle with 1/8 tsp of the salt and pepper. place on a baking sheet, cover loosely with aluminum foil, and bake for 50-60 minutes or until tender. scoop the squash from the shells and transfer the pulp to a food processor or blender. set aside; discard the shells.
  • 2 in a small saucepan, heat the oil over moderate heat. add the shallots and sauté, stirring, for 3 minutes or until softened. add the wine and cook, uncovered, for 2 minutes or until reduced to 2 tablespoons. stir in the stock, milk, and remaining 1/8 tsp each of salt and pepper. add the mixture to the food processor with the squash; whirl until puréed, working in batches if necessary.
  • 3 divide half of the soup among four 1 1/2 cup ovenproof bowls or baking dishes. place a slice of bread on top of each portion, then sprinkle each with 2 tablespoons of the cheese. top with the remaining soup and sprinkle with the remaining cheese. set the bowls on a baking sheet and bake the soup for 25 minutes or until bubbling. if you like, run the soup briefly under a preheated broiler to brown the cheese, then sprinkle with chives if desired.

Alton Brown's Baked Potato

  • 1 -4 russet potato
  • canola oil (or any oil you prefer, a lighter type works best)
  • kosher salt (regular salt works too if you don't have kosher salt)

  • 2 wash potatoes thoroughly with a stiff brush and cold running water.
  • 3 dry, then using a standard fork poke 8 to 12 deep holes all over the potatoes.

Barley Home Remedy

Ingredients

  • Servings: 1
  • 2 tablespoons pearl barley
  • 3 cups water
  • 2 tablespoons sugar (optional)
  • 2 tablespoons lemon juice (optional)

Recipe

  • 1 place water and barley in a 1 1/2 quart pot. bring to a boil. let boil until liquid is reduced by half, approximately 10 to 15 minutes, which allows the natural sugars to come out of the barley. the remaining liquid should be brown.
  • 2 drain the barley, saving the liquid, and either eat the cooked barley or throw away (it's only 2 tablespoons).
  • 3 return the liquid to the pot and add up to 2 tablespoon sugar, or other sweetner of choice.
  • 4 simmer the liquid for about 15 minutes. if you want, at the end of simmering for 15 minutes, add up to 2 tablespoons lemon juice (although, for me personally, adding lemon juice would just get in the way of the barley flavor).
  • 5 serve warm out of a coffee cup.

Blackberry Jelly

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 quarts fully ripe blackberries
  • 1/4 cup lemon juice
  • 7 1/2 cups sugar
  • 6 ounces liquid pectin (2 pouches)

Recipe

  • 1 crush berries and strain through a jelly bag to get 4 cups of juice.
  • 2 if you are slightly short of juice, add small amounts of water to the pulp in the jelly bag, to squeeze out more juice.
  • 3 combine blackberry juice with lemon juice and sugar in a large saucepan, mixing well; bring to a boil over high heat, stirring constantly.
  • 4 immediately stir in pectin and return to a full rolling boil, stirring constantly.
  • 5 remove from heat and skim off foam with a slotted metal spoon.
  • 6 pour into sterilized half-pint jars (you will require about 8), leaving 1/2" headspace.
  • 7 remove air bubbles.
  • 8 adjust caps.
  • 9 process in in water bath canner for 10 minutes.
  • 10 when cool, check seals, and refrigerate promptly any that have not properly sealed.
