Berry Burst Banana Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 cups strawberry berry burst cheerios
  • 1 1/4 cups whole wheat flour (the recipe calls for ap flour but i wanted to use whole wheat) or 1 1/4 cups all-purpose flour (the recipe calls for ap flour but i wanted to use whole wheat)
  • 1/3 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 cup banana, mashed, very ripe (2 to 3 medium)
  • 2/3 cup nonfat milk (recipe calls for skim milk but i wanted to use non-fat milk)
  • 3 tablespoons vegetable oil
  • 1 egg

Recipe

  • 1 heat oven to 400°. spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups.
  • 2 crush cereal. stir together cereal, flour, brown sugar, baking powder and baking soda in large bowl. stir in remaining ingredients just until moistened. divide batter evenly among muffin cups.
  • 3 bake 18 to 22 minutes or until golden brown.
