Barley With Peppers And Potatoes

Ingredients
- Servings: 4
- 6 poblano chiles, large, sliced 
- 2 medium onions, chopped 
- 1 tablespoon olive oil 
- 2 1/2 lbs red potatoes, unpeeled, coooked and cubed 
- 2 cups barley, cooked 
- 2 tablespoons cilantro, finely chopped 
- 1 teaspoon cumin 
-  salt 
-  cayenne pepper 
Recipe
- 1 saute chilies and onions in olive oil in a large skillet until crispy tender, about 5 minutes. 
- 2 add potatoes, saute until browned about 5 to 8 minutes. 
- 3 add barley to skillet; cook over medium heat until hot through, about 4 to 5 minutes. 
- 4 stir in cilantro and cumin.
