Apple Parsnip Soup

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 4 onions, chopped
  • 8 apples, chopped
  • 4 parsnips, chopped
  • 4 carrots, chopped
  • 5 tablespoons soup mix (optional)
  • 8 tablespoons olive oil
  • 3 teaspoons ground nutmeg
  • 16 cups water
  • 1 1/2 lemons, juiced

Recipe

  • 1 saute the onions with the olive oil in a large pot until the onions are golden.
  • 2 add the apples, the parsnips, the carrots, the (optional) soup mix, the nutmeg, and the water.
  • 3 cook on medium heat for 1 (one) hour, or until the carrots are soft.
  • 4 when done cooking, add the juice from the lemons, then take a hand-held grinder (or you can use a blender) and blend all the soup until it is smooth and there are no lumps of anything in it.
  • 5 your done! the soup can be served hot or cold.
