Apple Parsnip Soup

Ingredients
- 4 onions, chopped
- 8 apples, chopped
- 4 parsnips, chopped
- 4 carrots, chopped
- 5 tablespoons soup mix (optional)
- 8 tablespoons olive oil
- 3 teaspoons ground nutmeg
- 16 cups water
- 1 1/2 lemons, juiced
Recipe
- 1 saute the onions with the olive oil in a large pot until the onions are golden.
- 2 add the apples, the parsnips, the carrots, the (optional) soup mix, the nutmeg, and the water.
- 3 cook on medium heat for 1 (one) hour, or until the carrots are soft.
- 4 when done cooking, add the juice from the lemons, then take a hand-held grinder (or you can use a blender) and blend all the soup until it is smooth and there are no lumps of anything in it.
- 5 your done! the soup can be served hot or cold.
