Apple Rice Casserole

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 2 cups cooked brown rice
  • 3 small sweet apples, peeled and coarsely shredded
  • 1/3 cup apple juice
  • 1 tablespoon brown sugar, firmly packed
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/16 teaspoon ground nutmeg

Recipe

  • 1 preheat oven to 350°f.
  • 2 lightly oil a 1-1/2 quart casserole or spray with a nonstick cooking spray.
  • 3 in a large bowl, combine all ingredients.
  • 4 mix well.
  • 5 spoon into prepared pan.
  • 6 cover tightly and bake 45 minutes.
  • 7 serve hot.
