Aunt Phyllis' Orange Praline Yams

Ingredients

- 3 (2 7/8 lb) cans yams, drained or 4 lbs. cooked, peeled and sliced fresh yams
- 3/4 cup orange juice
- 1 tablespoon orange rind, grated
- 5 tablespoons brandy
- 2 teaspoons salt
- fresh ground pepper
- 1 teaspoon ground ginger
- 4 tablespoons butter, melted
- 1/3 cup light brown sugar, packed
- 3 egg yolks
- 1/3 cup light brown sugar, packed
- 4 tablespoons butter, melted
- 1/2 cup pecans, chopped
- 1 teaspoon ground cinnamon
Recipe
- 1 in mixing bowl, with electric mixer, beat yams until smooth.
- 2 mix in remaining casserole ingredients, beating until mixture is light and fluffy.
- 3 butter a 12 inch baking dish or shallow 2 quart (7 x 11) baking dish and pour in the yam mixture, smoothing top evenly.
- 4 make praline topping by mixing all praline ingredients together in a small bowl.
- 5 spread evenly over the yam mixture and bake at 350 degrees for 45 to 50 minutes or until golden brown and bubbly.
- 6 remove from oven and let stand 10 minutes before serving.
