Aunt Phyllis' Orange Praline Yams

Ingredients

  • Servings: 10
  • 3 (2 7/8 lb) cans yams, drained or 4 lbs. cooked, peeled and sliced fresh yams
  • 3/4 cup orange juice
  • 1 tablespoon orange rind, grated
  • 5 tablespoons brandy
  • 2 teaspoons salt
  • fresh ground pepper
  • 1 teaspoon ground ginger
  • 4 tablespoons butter, melted
  • 1/3 cup light brown sugar, packed
  • 3 egg yolks
  • 1/3 cup light brown sugar, packed
  • 4 tablespoons butter, melted
  • 1/2 cup pecans, chopped
  • 1 teaspoon ground cinnamon

Recipe

  • 1 in mixing bowl, with electric mixer, beat yams until smooth.
  • 2 mix in remaining casserole ingredients, beating until mixture is light and fluffy.
  • 3 butter a 12 inch baking dish or shallow 2 quart (7 x 11) baking dish and pour in the yam mixture, smoothing top evenly.
  • 4 make praline topping by mixing all praline ingredients together in a small bowl.
  • 5 spread evenly over the yam mixture and bake at 350 degrees for 45 to 50 minutes or until golden brown and bubbly.
  • 6 remove from oven and let stand 10 minutes before serving.
